  1. Do you have a recipe for red eye gravy.

    1. I don't have a recipe published here and everybody makes it their own way of course, but here's what you do. It's usually made when you have country ham, so I warm the slices in some butter or bacon drippings and then make red eye gravy from the pan drippings. The ham really flavors it up nicely, but you could just start with bacon fat or butter I suppose, and skip the ham. It's not really a gravy as in a roux based gravy, essentially it's just a tablespoon or two of the skillet fat from the ham, to which you add water, coffee or a combination of the two. Some folks like more coffee, some less, some just make it with water and some folks add just a bit of sugar or brown sugar to sweeten it. Not much to it really!
