Well y'all, the end of summer - at least meteorologically and "unofficially" - is near with Labor Day weekend rolling up right around the corner now! I have to say that I'm not unhappy with that because while, as usual, it has been a hot, hot summer down here, it also seems to be hot pretty much everywhere else too.

This past weekend our temperatures broke records! I am so ready for some fall weather, even though that does take awhile to get down here.

A classic recipe for southern peas simply seasoned and perfect as a side dish or as a feature on a vegetable plate - my personal favorite summer meal!

While I love all kinds of vegetables, my husband, aka "The Cajun," is not a big veggie eater.

He's more of a "starchy" vegetable kind of guy and specifically the classic meat and potatoes man, so potatoes make a regular appearance on the plate in this house, along with rice, because rice is a big deal in the Deep South thanks to our many rice fields.

In fact, according to Think Rice US Grown, each year American rice farmers sustainably grow roughly 20 billion pounds of rice in Arkansas, California, Louisiana, Mississippi, Missouri, and Texas, half of which is used domestically, and the other half exported. That's a lot of rice y'all!

But, we're talking potatoes here.

I'm plugging along with the heat advisories down here on the Gulf Coast, so no pumpkin or apple or fall-themed recipes here quite yet, much as I'm looking forward to it all after this hot, hot summer.

As easy as a simple syrup made from boiled sugar and water and a package of your favorite flavor of unsweetened, powdered Kool-Aid mix.



Inspired by a popular sandwich from a local hole in the wall tavern, this ribeye steak is marinated in a flavorful blend, then grilled, served on pistolette rolls and dressed simply with grilled onion, mayonnaise, lettuce and tomatoes. Serve with chips and a pickle spear.



Chicken thighs, simply seasoned and slow cooked in the crockpot with a mixture of pineapple juice, brown sugar and soy sauce, that is thickened and brushed on as a finishing glaze.

I have been using the microwave to make custard for my banana pudding instead of a stovetop double boiler for awhile now.

I know. I know. Just like a microwave roux, it seems controversial, but it really isn't.

A favorite egg salad, made very simply with the addition of shrimp, green onion, celery and mayonnaise. Serve with crackers, as a sandwich, or stuffed into a tomato. Light and delicious!

If you've hung around here any length of time, you already know I love chicken salad! It's a great meal any time of the year, but especially when the summer heat is on.

The one I make the most is what I call a classic deli-style chicken salad. It's a very basic chicken salad, absent all of the other goodies like grapes or cranberries or even avocado, or bacon and nuts and all the little extras we like to throw into our chicken salads these days.

Still, I'm not staunchly tied to one single chicken salad to be the one and only chicken salad, so I find myself constantly experimenting and trying new recipes, and, in fact, I've got quite a few different versions published already here at the website... and more to come!
