Hamburger Steaks and Gravy is a go to for me and a favorite meal for my meat and potatoes hubby. 

It's super easy to make, tastes great and is a filling, belly warmin', delicious meal. 

As much as we love tomato gravy here in the South, trading the classic brown gravy for a tomato-based version is a natural transition.

Make Ahead Turkey Gravy


There is nothing as delicious with that holiday turkey than a gravy made from the drippings, but it becomes just one more of those last minute things that has to be done in the whole process of all the other last minutes things. All too often folks just skip it and use a canned gravy, which of course, while there's not a thing wrong with that, it just doesn't have that same home-cooked, Thanksgiving flavor.

Bacon Gravy


Sunday I made a pork tenderloin. You know the ones - the packages of pre-seasoned pork loins that you literally don't have to do a thing to except pop in the oven or on the grill? Yeah, that's the one. My mother in law picks them up on sale from Winn Dixie all the time and the Cajun happened to comment how good one was when we were over there one Sunday. Lo and behold, next thing I knew she was sending him home with a couple. I told y'all, she's like that!

Egg, Biscuit and Sausage Gravy Breakfast Casserole

This is another one of those recipes that's been making the rounds on Facebook for awhile, made with canned biscuits, a packet of sausage gravy and eggs. Nothing wrong with that!

I wanted to make it from scratch though, so I made up a quick biscuit dough and easy homemade sausage gravy instead. You may certainly exchange that out for the convenience products to save time, but do keep in mind the sodium levels on any pre-packaged product so that you don't oversalt or overseason. You'll need an 8-count can of refrigerated biscuits and a packet of sausage gravy mix that makes 2 cups (such as Pioneer brand).

My Mama always made turkey giblet gravy on the holidays. It was just a given that you'd find gravy on the table with those little bits of giblets floating in it. I under-appreciated it back then, but now I know the added punch of flavor that infusing the gravy with giblets gives us. Some southern cooks add chopped, hard boiled egg to their gravy. Mama never did and neither do I, but feel free to throw some in if you like. You'll want 1 hard boiled egg, diced and stir it in just before serving.

Southern Homestyle Tomato Gravy

Southern Tomato Gravy is another one of our classic southern recipes, that goes great with those Sour Cream Biscuits I just posted a little earlier.  Totally different from what our Northeastern Italian neighbors call Sunday Tomato Gravy {what we Down South call Tomato Sauce, or Creole Gravy, or more often, just Spaghetti Sauce} meant for pasta.  This tomato gravy is the kind of gravy that us Southerners most traditionally love to eat over hot, and preferably homemade, southern buttermilk biscuits, like we do with our sausage gravy.

I know of lot of my regular readers are foodies and certainly know how to make gravy, but I hope that those in search of info will happen across this and find some help. We all had to learn somewhere! I recently made a casserole in need of chicken gravy and just today made roast beef po'boys and needed a beef gravy, so a "how-to" seemed fitting.

Southern Style Peppered Milk Gravy

A Southern favorite, this cream gravy is made with pan drippings, bacon drippings or butter, and often a combination of one or more of them. Milk, or a mixture of water and milk, take the place of the typical stock used in gravies, and a milk gravy is typically heavily peppered. You may also replace the milk with chicken stock or water for use as a gravy over meats.

Chorizo Sausage Gravy


Chorizo sausage gravy is a change of pace from the usual. Doesn't that just look yummy? I usually make my sausage gravy with Jimmy Dean bulk sausage - the kind that comes in the chubby roll. It's the best bulk sausage in the South, in my little ole humble Southern opinion, and I've tried many! It just has the right amount of seasonings and flavor to me.

Today, however, I had some Mexican chorizo sausages in the freezer, so thought I would use those instead. That pretty orangish-red color in that picture up there however, is a result of that chorizo and you won't have that color with the regular Jimmy Dean sausage.

Now I really love my Jimmy Dean, but I gotta say, with some hot from the oven biscuits, whether homemade, from a mix, or even from the freezer (yes! biscuits freeze wonderfully!), this shore 'nuf was delicious!

Southern biscuits and sausage gravy - talk about some good ole comfort food. I've made my gravy this way for as long as I've been cooking, but it's not like there's really much of a secret to it really. To be honest, I'm guessing just about all of us southerners make it pretty much the same way.
