I've actually never heard of these sandwiches before and I don't have any memory of them being served in my school cafeteria, although some of you may. 

I also have no idea how the name came about either, but it's another one of those vintage recipes that passed by on my browser start page and sounded good enough to try!

They are delicious! And bonus? They're also super easy to make.

Unlike some of you, I can't function in an online world with just a little handheld smart phone. Heck. I don't even know where my phone is half the time, but I watch my son, daughter-in-law and my grandchildren who do everything on their devices with such ease and I'm pretty amazed, but yeah. I still use a desktop, so I'm just Old School I guess!

Anyway... there's a start up page associated with desktop browsers that shows you headlines and featured articles for topics that you've chosen and since my life is so food centric, I often get recipe inspiration from something that appears there.

That's actually where this recipe originated and it popped up on my launch page so many times that I figured it was a sign to make it. Glad I did!

I'd never heard of a "plank sandwich" before, but apparently it really was a thing because this one was featured in Bell's Best 2 published in 1982, the second in the series of Mississippi Telephone Pioneers community cookbooks. Even still, I thought it was just one of those recipe names that a family came up with.

So, I turned to AI to find out if there was such a thing as a plank sandwich and was told:

If you happened to see my previous post for Old-Fashioned Lard Biscuits, you probably saw a bowl of this Hamburger Stew there, so I figured I'd slide this one in before Spring is upon us, although it's fast approaching!

Nevermind that the forecast says we'll be in the high 30s when it does roll in! 

Not that seasons mean a thing to those of us in the South when it comes to food. We don't really have much of a Winter season down here to begin with, but yes, even in the heat of Summer you'll find us making a gumbo, or even a soup or a stew... if that's what we want!

Okay, confession.

While I can recall having had a Crunchwrap from Taco Bell only once before and, in fact, while I also recall it being pretty tasty, it didn't drive me to have a constant craving so I didn't have much of a memory about how I felt about it!

Now don't get me wrong.

If I have a taste for a taco or three in a hurry, Taco Bell is gonna be my quick run y'all. They get a lot of ribbing, but I've always had a good experience with their food.

I love sauce and pasta dishes like this chili mac. It's so easy to throw together and gives you such a tasty dish that really most everyone loves and it's good any time of the year.

Besides a multitude of variations within the recipe itself that you can make by increasing and decreasing the chili seasonings and yes, even the cheese (or even leaving the cheese out), there are other ways to vary it too, just to give it a different flavor. Taco seasoned comes to mind as does a more mildly seasoned ground beef "helper" style of pasta and everything in between.

One day I ran across this recipe while browsing through Instagram - something that I like to do when I'm avoiding doing something else I should be doing. That can happen a lot these days and social media can be really good for that!

Anyway, this fella Kevin Ashton (@oldscoolkevmo) is a chef for a sorority house and he makes a lot of good eats that he cooks for himself at home and those gals and shares them on his social media. I'm sure they must really enjoy the things he comes up with because it's a wide variety of cuisines and it all looks good!

By the way, he's also battling stage 4 cancer (but seems to be beating it), so go and give him some love on one of his platforms y'all!

Probably not, because while it is pretty common in some areas of Louisiana, even often being served as a sandwich spread at parties, as a funeral food and yes, even wedding receptions, it's still not well known even across all of Louisiana, and certainly not the Southern region.

Well... we're gonna change that!

I know, I know... it's HOT! But this is one of my favorite casseroles to make, and I've made it twice here recently, so yeah, I'm sharing it, right in the heat of the summer.

Besides, it's a terrific potluck carry too that everybody enjoys.

There is something about the combination of textures and flavors here that make this an outstanding meal anytime of the year and perfect if you have a countertop oven (#ad), which is what I use the most these days anyway, especially in the summer.

I love American style Mexican food, and I'm certainly not opposed at all to using seasoning packets to season them.

They are 100% convenient and I usually keep a few on hand, but sometimes I also like to change up the ingredient amounts for different kinds of dishes.

I've tried a few different ones, including generics, and the brand that I like the most personally is Taco Bell Original (#affiliate) because it seems to have the best combination of flavors for me, but hey... I also enjoy their tacos on occasion when I'm hungry and I just want a quick snack!

So, the other day I had a craving for spaghetti.

I know, crazy, right? Mostly folks have "cravings" for sweet things, but me, I'm more of a savory kind of gal, so when I get a craving it's more likely it's for some kind of savory comfort food.

Maybe chicken and dumplings. Or tacos. Lasagna. Or those little burgers like Krystal's. Roast Chicken. Chicken Pot Pie. Homemade Mashed Potatoes. That sort of stuff.

Anyway, this specific time after our recent carb-heavy holiday meal, I was craving meat and more specifically meat sauce. I started to just make my normal semi-homemade spaghetti sauce, but then, I thought...

Like I said in a previous post, with social media, all things old become new again!

Although I am not a TikTok user, or even a fan, I have to admit it is kinda cool to see old recipes getting a revival with some younger folks.

Hamburger Steaks and Gravy is a go to for me and a favorite meal for my meat and potatoes hubby. 

It's super easy to make, tastes great and is a filling, belly warmin', delicious meal. 

As much as we love tomato gravy here in the South, trading the classic brown gravy for a tomato-based version is a natural transition.

I love cabbage rolls, but the prep always seems overwhelming!

It's really not that bad though, it just seems so, because every time I go ahead and start them, I realize the dread of the "work" was mostly just in my head. It just seems so daunting to think about it all, but really, some of the prep can even be done ahead of time.

This dish is a bit of a shortcut on that classic stuffed cabbage flavor, but without that anticipated dread.

I have truly enjoyed having an Instant Pot. Even though, much like the whole air fryer thing, I was skeptical, I own several pots now and I use them all the time!

For plain rice, rice dishes and boiled eggs. Potatoes for both mashed potatoes and potato salad or just for a side. Fresh green beans and carrots and cabbage and dried beans, done in no time. Pork roasts and ribs and pulled pork. Soups and stews and chicken, especially good for chicken and dumplings. And, given enough time, it's great for a nice, tender pot roast too.

It sure is fantastic for a quick pasta meal!

Y'all probably already know that I am into skillet meals. They're quicker than their more involved counterparts - like my skillet jambalayagumbolayaskillet lasagna or ziti, and great for busy weeknights.

Like a lot of you, I also love summer squash, but mostly it gets pushed into being either a snack or a side, rather than a featured dish. This version makes it more main dish with the addition of ground beef and rice, though it's really a very versatile dish. Well drained canned or thawed frozen mixed vegetables or corn may also be added to expand it even further.

So, it seems lots of folks around the country and in my own home state of Mississippi seem to love this casserole, and I went all my life without knowing that!

How it came by the name John Wayne Casserole is uncertain, though some say it appeared as a contribution in a 1979 cookbook of celebrity recipes, as a favorite recipe of Wayne's. I can see why. It's super tasty!

One-Pot Skillet Spaghetti

Spaghetti is such an easy meal that it's pretty much one of the first meals that everybody learns how to make.

Sometimes it starts as simply as boiling some noodles and topping it with a quality commercial sauce. Then it might graduate to adding beef, pork, or even a mix, chicken or seafood, using a mix of canned tomatoes instead (Cento San Marzano highly recommended) - and even better if they are home canned!

Hands down my personal favorite is a spaghetti made in the heat of the summer, from fresh, homegrown, backyard tomatoes.  You just can't get that flavor any other way. Yum y'all.

Lasagna is one of the best loved casseroles there is. Even on the All Recipes website, the all-time, most popular recipe is what's called "World's Best Lasagna," which turns out to be pretty much the same as my recipe, my Mama's recipe, and likely I'd guess, pretty similar to just about every other good, homemade lasagna in the world, really.

Even that recipe has a striking resemblance to the McCalls 1973 cookbook recipe, that I'm certain many homemakers adopted as their own at the time.
