Quesadillas are good anytime, even for breakfast, and they are the perfect summer meal because they are not heavy, they're quick and easy to make, filling versatile and they just taste great!

Serve them up with salsa and a side of fruit like summer peaches and you've got a great meal.

I keep flour tortillas and shredded cheese on hand all of the time so I make them often, with various meats and cheese, or even with just plain cheese, and in this case, I decided to go with some Gulf shrimp.

Couche Couche - Cajun Breakfast Cereal

This Cajun Breakfast Cereal, known as Couche Couche, Cush Cush or Coush Coush, is made from a cornbread batter, poured into a hot, cast iron skillet, crusted and turned several times, then covered and steam cooked to finish and served with milk or cream.

Unless you live down in this part of the Deep South, you've probably never heard of this dish. Often referred to as a Cajun breakfast, cornmeal cereal, though it's enjoyed just about any time of the day. It comes under a few different names, including  Cush Cush, Couche Couche or Coush Coush, all pronounced "coosh-coosh."

Although some folks will want to compare this to a cornmeal mush, it's actually quite different.

These are a treat that's a real throwback for sure, because for me they are another recipe that dates back to the 70s. I call them crab melts, though they have picked up a number of names over time, including crabbies, crabmeat bites, crab pickups, and crab canapes, to name a few.

Tex-Mex Migas

Plus it seems I just about always have corn tortillas on hand so it's easy to whip 'em up too. Don't think they're just for breakfast either, because they make a mighty fine lunch, or even breakfast for dinner.

Croque Madame or Monsieur

A hot ham and cheese sandwich, covered with a creamy Béchamel sauce, and finished with a fried egg. Simply omit the egg for a Monsieur.

Rotisserie chicken purchased from your local grocery store deli is a great quick meal for those rushed weekday dinners. Buy the larger one and you'll have some leftover chicken, perfect for this chicken salad.

Otherwise, just prepare a whole chicken just like you do for soup or chicken and dumplings, or try my oven poached version, because this is one great sandwich!

There aren't too many versions of chicken salad I've run across that I don't love to be honest. Tarragon, even curry are a little unusual but tasty, though I lean more toward the dried cranberry and honey chicken salad, or my grown up tea room style with apple, grapes and pecans, and in my case, another little secret ingredient!

The one that many of us love the most, is this very simple, old-fashioned, deli style. I often add chopped, boiled eggs to mine.

Now honestly, I guess I wouldn't generally post about making something as simple as an egg salad, or here, tuna and egg salad. Or, maybe I would {scratches head} dunno... but, it is Lent afterall and I'm tryin' to do my best to stay away from meat on Fridays and so, I wanted some tuna and egg salad for lunch - so I figured what the heck.

Grilled Tomato Basil Chicken Wrap with Bacon

Boneless, skinless chicken breast, seasoned generously and grilled, sliced and wrapped along with some veggies, in a flour tortilla.

Grilled Tomato Basil Chicken Wrap with Bacon

This is a revision of one of my old Weight Watchers standby recipes, so yes, though the fat has been reduced a tad, it's all about adding in some flavor pops here with a little Tiger sauce or your favorite hot sauce infused into some mayo.

Boneless skinless chicken breasts are enhanced with a generous sprinkling of some tomato, basil and garlic seasoning and grilled, added to a flour tortilla, spinach here, filled with veggies and topped with just a bit of salsa, making for a pretty flavorful wrap.
