Grated Egg Tuna Salad


I liked the texture of the grated egg salad I shared recently so much, that I decided to make a tuna salad like it! Grating the eggs makes for a creamier result over chopping them.

I pretty much followed the lines of my classic tuna salad, though I did change up the proportions a bit - more tuna, more egg and onion powder in place of green onion.

While I have passed by their location in Biloxi several times, I have never eaten at a Jimmy John's and it has nothing to do with any kind of controversy with the original owner.

Truth is, I cook so much so we rarely eat out anywhere, unless I'm just exhausted and there aren't any leftovers that appeal to me! Plus, it ain't cheap to eat out these days now is it?

Heck, fast food isn't even a cheaper option anymore either. A family-sized dinner from a great fried chicken restaurant can be $40 or more y'all!

Not long ago, my sister in law told The Cajun she was getting rid of some old cookbooks and asked him if I might like them.

Since physical libraries don't hold onto cookbooks for very long these days and the older cookbooks are extremely useful tools for recipe research, I'm never one to turn down cookbooks, so I said of course! 

Most of them were older Southern Living annuals and back then, not only were they summaries of the year's recipes shared from the magazine, a lot of folks don't realize that many Southern Living recipes started much like you see with Taste of Home - they were recipes submitted by readers!

Okay y'all. I know everybody's in fall mode, sharing their favorite apple recipes, and pumpkin recipes won't be far behind - if they haven't started up already. Heck, we're only in the high 80s this week here in South Mississippi, so that's practically fall weather here, far as we are concerned. But... I'm gonna squeeze in at least one more "summer" recipe before the calendar tells me it's officially fall.

Now honestly, I guess I wouldn't generally post about making something as simple as an egg salad, or here, tuna and egg salad. Or, maybe I would {scratches head} dunno... but, it is Lent afterall and I'm tryin' to do my best to stay away from meat on Fridays and so, I wanted some tuna and egg salad for lunch - so I figured what the heck.
