Tomato and Cucumber Salad

Sometimes the simplest things really are the best, especially when the heat is on - and brother, has it ever been on in the Deep South.

I am slap wore out, y’all. This heat has me so foggy and drained that I completely forgot to “style” a pretty picture for you, so please forgive my absentmindedness. I'm just running behind on everything, but I’ll catch up on the next round.

This Tomato and Cucumber Salad is one of those easy, refreshing sides we grew up with, though I’ll be honest with you… this time of year I can make a whole meal out of it.

I’ve been enjoying the mini cucumbers a lot lately, but on my last grocery order I was substituted with these humongous cucumbers, so I thought, why not try a slightly different dressing - combining a couple of vinegars outside of the usual white or cider.

It’s cool, crisp, and perfect for hot Gulf Coast days when you don’t want to fuss with much.

It comes together in minutes, chills in the fridge, and tastes even better after it sits a bit. Great with anything off the grill, alongside sandwiches, or just as a light little bowl of something fresh when you’re simply not up to cooking.

Here's what you'll need to make this Tomato Cucumber Salad:

For the Dressing:
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons white wine vinegar
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon minced garlic, optional
For the Salad:
  • 2 large cucumbers, peeled and sliced 
  • 2 tomatoes, cut into chunks
  • 1 small red onion, sliced thin
Fresh cucumbers, tomatoes, red onion, olive oil, vinegars, sugar, salt, pepper, and garlic arranged together before preparing the salad.

It's a quick and easy way to get all the produce cleaned up before prepping and there are lots of options out there now. Find one and use it!

The dressing starts with two vinegars, olive oil, sugar, salt, pepper, and a little garlic. Just whisk it together right in the bowl.

Toss everything together and it's ready to chill. It really does get even better after it sits for a bit in the fridge.
