I have a pretty good collection of baked ham recipes here on the website, but you may have noticed that I haven't ever featured a spiral sliced ham here. Ever.

Until today.

There's a reason for that, and it's simply that I have never had a great amount of success in warming them through without it ending up dry. Until today.

I am happy to say that, as simple as this ham is, it turned out excellent!

Course... it's way too hot here for November in the Deep South right now and I'm anxiously awaiting the return of some of those cooler temps we got a taste of recently. That sure felt nice!

I don't know what foods are most appropriate for certain occasions or when.

When I ran across this recipe for noodle pudding in the cookbook by Julie Albert and Lisa Gnat called Bite Me, I was fully skeptical, but I decided to give it a try,

Monte's Brown Sugar Orange Glazed Ham

You may not have heard of Monte's Ham. It's been around awhile, dating back to 1995, when Monte Mathews developed it for, and it subsequently became, one of Saveur magazine's most popular recipes, earning the author a bit of fame back then.

I haven't seen much talk of it as Monte's ham these days, though to be honest, I'm thinking the origins just got lost in the shuffle, as the popularity of a ham glazed with some form of orange became more commonplace. I'm pretty sure that Mr. Monte drove that trend though.

I am all for being about tradition when it comes to holiday meals. Keep the dishes that you know and love on the menu, because everyone will be expecting them, every, single year!

My Mama's holiday table was the same every year, with very little variation between Thanksgiving and Christmas. I miss those times so much, and while we now share our holidays with my son, our daughter-in-law and grandkids, I still find myself missing my Mama tremendously this time of year.

Corn Pudding suffers a similar identity crisis as corn casserole. What defines it is most often what you grew up with and nobody makes any of it the same way.

What some folks call corn spoon bread, others call corn casserole... and vice versa.

Cajun Rice Dressing

Cajun rice dressing, or dirty rice, is a rice based mixture often served during the holidays. A roux is what sets the two apart in my recipe box. Read on to see how to make this a Cajun Farre dressing for sandwiches!
Cajun rice dressing is a rice based mixture similar to dirty rice and often served during the holidays. Some folks say omitting the livers is what sets it apart, but I like to include them along with a small roux.

This Cajun Farre Rice Dressing is essentially a dirty rice recipe, sometimes called Dirty Rice Jambalaya, that's been jazzed up a bit with a small roux for the holidays, beef stock added and baked, resulting in a more moist dish than dirty rice. It often makes an appearance both stuffed into some kind of bird or beef, or just simply as a side dish. 

I most often make this with chicken livers, or I use all of the giblets, though some folks say that rice dressing shouldn't have the livers - only dirty rice. I say do what you like! Love them? Use them. Not so fond of them? Don't use them. I happen to like them and so long as I grind them up, The Husband, aka The Cajun, who wouldn't touch liver for the life of him, gobbles it up. Hey, don't judge! All I can say is it works, because not only does he eat it, but he always goes back for more.

Baked Garlic Cheese Grits with Sausage


I love my stovetop version of garlic cheese grits. They are a creamy, cheesy, and perfect garlicky cradle for eggs in purgatory, shrimp and grits, or grillades and grits, or as a tasty side dish, great with scrambled or fried, dirty eggs.  Last week though, we were chatting over on the Facebook page about everybody's favorite way to make a baked, casserole-style cheese grits, like this one; souffle-like and fluffy.

This was a traditional Christmas cake around our house growing up and it is as moist as it is pretty. I can barely think of Red Velvet Cake without thinking of my Mama, and it is the Christmas season where my heart gets real heavy on missing her.

I have heard that there is a newer evolution of red velvet cake that substitutes cooking oil for the real butter used in the original cake. I can't imagine why. Why you would want the oily residue of a cooking oil versus the flavor impact and richness of butter is beyond me, though I think it probably has something to do with the mouth feel texture result, which would probably be somewhat similar to a box cake mix that so many people use. If so, then just use the box mix I say! As far as me, I don't know that I'll go messing around with something that I know is delicious and good... and works!

I don't know what it is about sweet potatoes fluffed up souffle like and topped with gooey marshmallows, but we sure love this dish down here in The Deep South and it is a rare Southern table that is not graced with it on Thanksgiving or Christmas, or both.

Try adding this combination of sweet potatoes with butternut squash to your holiday menu.

We have a pretty short window of availability for any kind of winter squash in the south, and butternut barely gets a passing glance in the grocery stores here. Given that, it isn't a squash that I have experimented with much.

One thing I did find, however, was that I was not too wild about it at all in any kind of soup form, which seems one of the most common ways it is presented.

I love breakfast casseroles but I hate having to think about building them the night before ... I never think about that the night before!! And besides that, I usually wake up deciding I want a breakfast casserole - I don't usually want it the night before!

While occasionally I will construct a night before dish, this breakfast recipe is my go-to for the most part. It's got everything a good breakfast casserole should have - potatoes, cheese, sausage, bacon and eggs. And you can make it right away!

I use Libby's Perfect Pumpkin Pie recipe as the basis of my pumpkin pie and I have for years.

After all, if it's good enough for Martha Stewart, it's good enough for me too.

Yes, it's true! That's the pumpkin pie recipe Martha recommends.

Really though, I know myself well enough to know that I am not about to roast a pumpkin and go through all that mess to make a pumpkin pie, and frankly Libby's 100% pure pumpkin product and Perfect Pumpkin Pie recipe have always provided a consistently great pumpkin pie, so why try any other?

Believe it or not, folks who comment on Facebook that they had used a recipe for anything for years and it's always perfect but "I might just try this one," I always respond - why would you? You know the old saying... if it ain't broke, don't fix it!

So as to Libby's pie, don't go messing with it, you hear?! It's absolutely perfect as it is, I promise!

I do say, however, carry your own unique signature in the way that you top it, and in the sauces you can make, like this maple rum sauce ... this is where you can make your own signature pumpkin pie!

I happen to like pumpkin pie with a praline topping, but you can omit that altogether if you like and serve it unaltered - but for a dollop of whipped cream, which, frankly, is almost required!

Jam Thumbprint Cookies have long been a favorite holiday cookie. This, like most thumbprint cookie recipes, is the same standard recipe with loads of butter and dabbed with dot of jam, but I love the addition of the coconut that Ina Garten uses. Not a common addition in the typical thumbprint, but I think it makes a big difference. This cookie is a winner - give it a try! Bake these on a plain, ungreased baking sheet. Don't use a silpat or the cookie will spread too much.
