Favorite Southwestern, Mexican and Tex-Mex Recipes

I love Mexican food, or I guess more appropriately, what we in the United States know as Tex-Mex, a more Americanized version of anything remotely resembling authentic Mexican cuisine.

I confess though, I'm a pretty simple girl when it comes to it. Give me some chips and salsa or that fabulous cheese dip to start, or maybe even some nachos and a margarita and I'm pretty good with tacos, burritos, or the occasional tostada. Love those!

When The Cajun and I go out to our favorite local Mexican restaurant, I'll venture out a bit, almost always ordering something different and often from their seafood specialties, or maybe something that's a little more bothersome to make at home, like chimichangas or sizzling combo fajitas. The Cajun almost always gets the crunchy beef tacos. Yep. Just plain ol' tacos! That's what he likes.

Skillet meals with Southwestern or Mexican flavors are a favorite, as are casseroles, simply because they are a good bit of less effort. Here's some of my favorite things to make at home.




Known as Mulitas in Mexican culture, highly seasoned chicken is sandwiched between homemade corn tortillas with shredded cheese and finished with guacamole or avocado, sour cream, pico de gallo or salsa, or whatever your favorite toppings are.

Mexican-style sandwiches of refried beans and cheese, served on sturdy rolls and toasted, then topped with pico de gallo, make for a nice snack, though they are often served at breakfast, lunch or dinner as well. Add your own favorite toppings!





Highly seasoned grilled shrimp served on grilled fresh corn tortillas with salsa fresca, onion, cilantro and fresh lime.

Huevos Rancheros, or Rancher's Eggs, was a popular mid-morning meal on Mexican farms and has made it's way to our tables. Great for breakfast, brunch, or breakfast for dinner, lightly fried corn tortillas are topped with a layer of beans, salsa, avocado, a fried egg, crema and shredded cheese with a dash of hot sauce.
