Favorite Southwestern, Mexican and Tex-Mex Recipes

I love Mexican food, or I guess more appropriately, what we in the United States know as Tex-Mex, a more Americanized version of anything remotely resembling authentic Mexican cuisine.

I confess though, I'm a pretty simple girl when it comes to it. Give me some chips and salsa or that fabulous cheese dip to start, or maybe even some nachos and a margarita and I'm pretty good with tacos, burritos, or the occasional tostada. Love those!

When The Cajun and I go out to our favorite local Mexican restaurant, I'll venture out a bit, almost always ordering something different and often from their seafood specialties, or maybe something that's a little more bothersome to make at home, like chimichangas or sizzling combo fajitas. The Cajun almost always gets the tacos. Yep. Just plain ol' tacos! That's what he likes.

Skillet meals with Southwestern or Mexican flavors are a favorite, as are casseroles, simply because they are a good bit of less effort. Here's some of my favorite things to make at home.



Boneless chicken breasts, soaked in a southwestern seasoned, brown sugar brine, tossed in fajita seasonings, grilled over indirect heat and served with a southwestern seasoned rice.

A corn salad made in the tradition of Mexican Street Corn on the Cob, with fresh cooked corn and dressed with a mayo and sour cream mixture of Cotija cheese, chili powder, cilantro, lime juice and zest. Toss in some crisp veggies, chill well and garnish with a little more cheese and cilantro.

A mixture of fresh corn, cut from the cob, sauteed with Vidalia onion, sweet and hot peppers, and finished with southwestern seasonings.

A Tex-Mex casserole made from seasoned shredded pork, chicken or beef and beans, layered with corn tortillas, cheese and taco sauce and finished with chopped onion, tomato and shredded lettuce.



A quick beef and rice skillet with a little Southwestern flair from sweet and hot peppers, chili powder, cumin and paprika, diced tomatoes with green chilies and Mexican blend cheeses. Eat as is, or roll up in flour or corn tortillas and top with a dollop of salsa, guacamole and sour cream.

Spanish Rice - a side dish made with bacon, rice, tomatoes, the Trinity of veggies and a few simple seasonings.

Guacamole, made with a little Deep South regional influence, incorporating some spicy Louisiana flavor.

Enchilada Casserole, layered with crushed tortilla chips, cheddar cheese, and a sauce of ground beef, onion and garlic, cream soups, green chilies and enchilada sauce.

Skillet Chili Mac - a quick skillet meal of ground beef, tomatoes, chili seasonings, beans, cheese and medium shell pasta.

A Tex-Mex favorite, this homemade from scratch version of King Ranch Casserole is made using a highly seasoned shredded chicken, and a butter roux-based cream sauce, seasoned with a medley of veggies and peppers, and layered in with cheese and corn tortillas. Yum y'all!

Like a deconstructed jalapeno popper, this dip is made with jalapenos, green chilies, cream cheese, Parmesan and cheddar, and topped with a buttery bread crumb.

Huevos Rancheros, or Rancher's Eggs, was a popular mid-morning meal on Mexican farms and has made it's way to our tables. Great for breakfast, brunch, or breakfast for dinner, lightly fried corn tortillas are topped with a layer of beans, salsa, avocado, a fried egg, crema and shredded cheese with a dash of hot sauce.
