Chicken Tortilla Sandwiches (Mulitas)

Known as Mulitas in Mexican culture, highly seasoned chicken is sandwiched between homemade corn tortillas with shredded cheese and finished with guacamole or avocado, sour cream, pico de gallo or salsa, or whatever your favorite toppings are.

Chicken Tortilla Sandwiches (Mulitas)

I don't remember where I first heard about mulitas, and, in fact, when I first did, I mistakenly assumed it was just another name for a quesadilla!

The reason for that is that I usually make my quesadillas the same way as these mulitas.

Although both can have very similar fillings, some of the differences I've seen between quesadillas and mulitas include:

Fried Pasta

An easy, re-purposed pasta dish made from leftover pasta, pasta sauce, meats, like pepperoni, smoked sausage or other leftover meats and cheese. Fast and delicious!

Fried Pasta

While you can certainly make fried pasta intentionally using freshly boiled pasta, sauteed meats and jarred pasta sauce, it's really a dish born out of leftovers and wow is it a delicious repurpose!

Although, I've written it out here for you with measurements - which results in about 4 cups pasta, or what I say is two healthy adult sized portions - essentially there's no recipe. Just a good olive oil, butter, leftover pasta and leftover sauce is really all there is to it. Throw in some leftover cooked or smoked sausage, meatballs, pepperoni, shredded beef, whatever you've got.

Spanish Rice

With some variations in cooking method - stovetop, oven or a combination of both - and ingredients - tomatoes versus sauces, pastes or purees - that, which is defined as Spanish Rice across much of the country, is quite similar to Red Rice from the Lowcountry and the base of our beloved Creole Jambalaya of the Deep South.

Southern Chicken and Cornbread Dressing

I have shared several dressing recipes along the way and I've even had my hissy fit rant about my feelings on the dressing vs. stuffing debate to which, I will reiterate, once again... whatever you grew up with, and what you do in your Southern kitchen, is right, bottom line. It's all good folks, so let's just eat, okay?

I know. I am such a rebel.

Buitoni Riserva Wild Mushroom Agnolotti with Meatballs and Spicy Red Sauce

If your wife or significant other is the chief cook and bottle-washer like me and you're looking to relieve them of meal duties for Mother's Day, or cook a special meal for your mom, run to the refrigerated section of your store and pick up some Buitoni pasta pillows.  Then pair that with my 30 minute speedy sauce {definitely add in the Rotel tomatoes this time for a nice kick that totally compliments the mushroom agnolotti} or, use your own favorite sauce, and add some pre-made, store-bought or homemade meatballs if you like, and you want to talk about a gourmet meal.
