There are many stories of the origins of the folk tale of Stone Soup, and it seems to cross many cultures as well, but essentially it centers around the tale of a hungry traveler who arrives in a village where the residents don't seem to want to share their food.

The traveler goes to a stream, fills a pot with water and drops a stone into the water - promising the stone will result in a very special soup.

They certainly weren't a thing for me when I was younger, that's for sure, and I've shared that story here before. But... let's just say as I matured as an adult, my love of oysters grew and the holidays are certainly when they show up.

I've got another new soup to share with y'all for National Soup Month before we roll out of this crazy January. We warmed up a few days and are now heading back to a little bit of a chill down here along the Gulf Coast, but thankfully not nearly as crazy cold as it was recently!

Y'all. We came close to having snow here along the beaches in that round, but all we ended up with was some sleet. Snow always seems to just miss us.

Certainly it's the season for soups, stews, chili, gumbo and... chowders! Although a lot of us enjoy all of those year round, winter is a perfect time for a good soup and I love trying new ways to make it!

As I write this post, we are just coming off of the Thanksgiving holiday and I am finally coming out of my food coma! Although there is plenty of turkey and ham served, we Southerners do tend to include a lot of carb heavy sides. Foods that we love and expect for the holidays. 

By the time that Monday after Thanksgiving rolls around, I find myself craving vegetables and if you're a regular to the site, you already know that I am a nut for all kinds of cabbage, so let's combine the two!

We all have a least one of those simple foods that brings back memories and this is one of mine. Another one of those sinfully simple recipes that deserves a mention especially since it makes a great Lenten meal.

When I was a young gal, I used to hang out and spend the night at my cousins' house every once in awhile. Debra was close to my age and Patty wasn't all that far behind us, and we all got along and had a good time. It was nice to get out of the house and hang with them.

Even though this is a good soup anytime, with New Year's around the corner, I wanted to prepare a true potlikker soup, meaning not a shortcut version like my Beans and Greens or Swamp Soup, both of which could technically qualify as a potlikker soup.

Instead, I wanted to prepare a more genuine homemade version using a long, slow stewing of the greens to form a solid potlikker from the greens. What better way to do that than with a slow cooker?

This is actually my first slow cooker recipe in awhile!

We've been flip-flopping between freezing to humid and warm down here along the beach - and mostly warm and humid lately. But you know what they say... just wait a day or three and that's subject to change of course!

You cannot beat a homemade soup, though there's not a single thing wrong with canned soup either, and in fact, you can always find a can or three in my pantry.

I mean how can you not at least have some Campbell's chicken noodle soup on hand?! Seriously.

Some canned soups are better than others of course, but... sometimes, you just want a few servings of soup that's homemade, fresh and hot and not out of a can, but without a lot of work or that makes a massive pot! This is that.

In case you missed my previous post for The Bouilli, this is the Beef Vegetable Soup that I made after preparing the initial meal of "boiled meat with juices," served with rice.

In short, Creole Bouilli refers to the preparation of a beef roast that is slow-braised (you don't really want to boil it) for several hours, completely covered in liquid, and to which I added some seared beef bones.

While you can use any leftover roast for this soup, of course, the outstanding flavor of The Bouilli makes a knock your socks off soup. To learn more about The Bouilli, tap that link and learn all about it!

I love soup, and yes, around here it is usually featured as a main dish meal, accompanied by some kind of bread, crackers or a sandwich, rather than just a starter soup course to go along with an entree of some kind.

For the most part, I want those soups to be quick and easy, although there are times I do put a little bit more of my time into them.

Whenever I make a pot of white beans and greens close together, a stew of beans and greens are sure to follow.

I believe that Italians have a similar dish, possibly known by the name of Zuppa Di Scarola E Fagioli from what I found on the net, though I was not able to locate a recipe by that name in my copy of The Silver Spoon. They would likely use cannelloni beans and include escarole as the greens, but in the U.S. south, we all know what greens are king. Collards, turnip and mustard greens rule the south.

We've had a nice, though likely temporary, reprieve from the heat and humidity these last couple of days. It's so nice when the oppressive heat goes away even for a bit and we can breathe a little easier, but... it is still September. We have lots of summer still to go around in the Deep South!

I love chicken and dumplings. Love it! It's one of my favorite dishes and that goes for any time of the year, not just winter.

While I do tend to follow the same basic guidelines, even with a variety of methods, I'm not married to any one of them. So many folks make chicken and dumplings one way all of their life, but I love playing around with it!

Beans, along with their cousins, Southern peas, are a very common meal in the Deep South. They're filling, easy to stretch and tasty! What more could you want to feed a family?

Chicken Taco Soup

I absolutely love this soup, whether it's made with ground beef or chicken. It's got such great flavor and it's about the easiest soup there is to throw together.

You can start with raw chicken that you poach, a deli chicken or chicken that you previously put up in the freezer, which I tend to have the most. Thanks to on-sale whole chickens, an Instant Pot and a Food Saver, there is always some cooked chicken in my freezer. I chose to chop up my chicken this time, though shredded is also good for this.

Whole chickens are on sale around here often and I sure take advantage of them, always buying a larger one for intentional leftovers. Sometimes I'll roast one, sometimes stew it, or cut it up and bake it.

Very often I'll use my Instant Pot {affil link} to cook a whole chicken using my "ready chicken" recipe, use some of it for a meal, then reserve the rest to use in a soup, chicken and dumplings, a casserole, some chicken salad, or even just to put up in the freezer for another day.

I started off intending to make this chowder with some frozen crawfish tails, that I was sure I had in the freezer. Unfortunately, after having to hurriedly rearrange things and transfer stuff from the refrigerator freezer, to the deep freeze, courtesy Hurricane Zeta, it was just faster and easier to grab some shrimp.

No worries. They are delicious too! The only difference really, is the flavor that comes from the fat in the crawfish, but honestly it's a good chowder either way. You can even use a combination of the two, or throw in some crab as well. Although not as popular down here, clams may also be substituted. Oysters as well.

I sure love a good soup and even better when it's one of those quick and easy versions, but one that still tastes great!

Soup is pretty easy to make, no doubt about that, and you don't really even need a recipe.

In fact, some of the best soups come out of refrigerator or freezer leftovers thrown together! Trouble is though, trying to recreate the same flavor the next time if you find you really enjoyed that soup!

Among the varieties of southern beans and peas, butter beans are right at the top. In addition to their creamy buttery texture and taste, they are a powerhouse source of low fat, high protein fiber, rich in iron and B vitamins too.

They're certainly popular in the south and a lot of folks start planting them in the early spring for a plentiful summer crop. I hope that you put some up in the freezer, because this soup is fantastic! No worries if you didn't though, because they're widely available year round in both dried and frozen forms too.
