Classic Lasagna

Lasagna is one of the best loved casseroles there is. Even on the All Recipes website, the all-time, most popular recipe is what's called "World's Best Lasagna," which turns out to be pretty much the same as my recipe, my Mama's recipe, and likely I'd guess, pretty similar to just about every other good, homemade lasagna in the world, really.

Even that recipe has a striking resemblance to the McCalls 1973 cookbook recipe, that I'm certain many homemakers adopted as their own at the time.

This pork roast uses that same combination of good ole cola soft drink and dry onion soup mix we love on a beef roast, and the same as that beef roast that is so delicious, so is a pork loin done the same way.

Yes, Southerners like to cook with cola - which of course includes things like 7-up and Dr Pepper and root beer, of course - because we all know that the word cola covers all beverage bases in the South.

There's a roast blazing across the interwebs and the world of Pinterest called "Mississippi Roast," and if you google it, you'll find it everywhere. It's the roast that broke the internet.

In the beginning of making this, like most others, I had no idea where the recipe began, or even how the recipe got the name Mississippi attached to it, because best I could figure, somebody who threw it together one day must have just happened to be from Mississippi.

Well, I'm here to set the record straight on that!

I happened to catch whole chickens on sale for 67 cents a pound recently, so of course I stocked up on a few and had in mind one of them would land as another form of roasted chicken for the Sunday Supper series for sure.  But, as I do sometimes, about mid-stream of beginning to prep the chicken for roasting, I decided to pull down Julia Child's cookbook Mastering the Art of French Cooking {affil link} and do something different.

This is one of those great chicken bakes that has been around forever and is a southern favorite. Yes folks, it uses canned cream of mushroom and cream of chicken soups, though if you are opposed, you can certainly make your own homemade sauces. Lower sodium soups are also fine to use, but do remember that chicken tends to be bland without salt so you'll want to use your usual replacements to enhance the flavor.

Similar to our beloved southern fried chicken, a boneless, skinless chicken breast is pounded thin, dredged in flour and fried. Served with a drizzle of creamy milk gravy made from some of the pan drippings, it is truly good ole comfort food.

Sounds a little silly doesn't it?  I mean fried chicken is just, well, fried chicken, how could it be a chicken fried chicken? Right?

A Facebook reader posed that very oddity when I mentioned I was making Chicken Fried Chicken for Sunday supper.  It really just refers to the preparation - a method similar to chicken fried steak - and, what sets it apart from traditional bone-in fried chicken.

I purchased a pork shoulder, just under 9 pounds, at the Commissary the other day with the intention of making some kind of crockpot cheater pulled pork with it. I had seen Sandra Lee do a substantially smaller pork butt on Food Network recently, cooking it in a mixture of barbecue sauce, chicken broth and mustard. It looked really good, though I wondered if using a sauce with all that fat produced from the pork would really make a difference.

Nor have I thrown my Homemade Custard Banana Pudding to the wayside either... but, let me just back up here for a second.

As I write this, New Year's Eve has passed recently with a dropping of a giant illuminated Moon Pie in Mobile, Alabama, and with Mardi Gras upon us, pretty soon they will be flying off of floats all over the Gulf Coast region.

The rest of you around the country are probably thinking "what the heck is she talkin' about?" Why, yes - Moon Pies! They are a well-loved southern icon, that's for sure.

Smothered Pork Roast with Rice

This Smothered Pork Roast recipe is as simple as it comes. A seared pork roast, seasoned with salt and pepper, smothered in a gorgeous garlic, rosemary and thyme infused gravy, and braised in a covered Dutch oven, low and slow. The original recipe called for a boneless pork butt or shoulder, but I could only find a 7 pound bone-in pork shoulder, and even that just barely squeezed into my Dutch oven. The downside to using the bone-in roast is that there is less meat, but it was enough for the two of us. It is a heavenly way to utilize a cut of pork that is most often reserved for pulled pork sandwiches though it can be used for other cuts as well. The fragrance of it will surely bring you back to grandma's kitchen and the flavor is just simply pork perfection.

On my last trip to the grocery store I found myself in the mood for beef apparently, because beef cuts were all that I picked up that trip. Guess after all the chicken and shrimp lately, my body was looking for some meat!

Okay. Fair warning. This chicken and dressing is a bread dressing and it has a butter roux - puh-lenty of butter. Like 1 full stick of Paula Deen worthy butter. And this one is made with a combination of chicken and herb dressing, meaning bread dressing and not cornbread, so don't go balking at me.

It's totally different from your mama's meatloaf, has a few additional steps you don't usually see in a meatloaf, so it takes a bit of time to come together, but it is so worth it! Searing creates a tender and juicy meatloaf that thanks to our famous Trinity, just full of flavor. Don't expect any leftovers to last long.

Oven Braised Beef Eye of Round Roast with Pan Gravy

This braised eye of round roast is similar to the rump roast I recently posted, except that this one is made with an eye of round roast and doesn't require an overnight marinade, so it simplifies preparation time a little bit. I don't know about you, but I have the hardest time remembering to do things the night before sometimes.
