Cuban Pork Roast - Lechón Asado

A pork roast, rubbed with garlic, salt, cumin and oregano, marinated in a sour orange mojo with onions and then slow roasted. Serve Cuban-style, sliced and with a side of rice and black beans for your first meal - use leftovers to make a traditional Sandwich Cubano.

Cuban Pork Roast - Lechón Asado


For years I was deprived of a true Cuban-style sandwich. I wasn't even aware they existed, until I started developing and writing my own recipes for my website, Deep South Dish, but once I did, I was insatiably curious about them! There wasn't anyplace around here to buy one to try though - still isn't as far as I know.

From what I had seen around the net, the sandwich was very simple - a basic sandwich made with ham, cheese and pork roast - often just simply whatever pork roast was leftover from dinner. But, could that be right? Not so much.

I know, I know... as I write this it's supposed to be Fall, well... according to the calendar at least, that is.

Although we got another nice blast of slightly cooler air again this week here in the Deep South, blink and we're right back into mid to upper-80 degree temps during the days and, well... it's still hurricane season for us anyway. It's pretty much still summer here, far as we're concerned.

The nice parts of summer though, that we love so much here - beautiful blue, sunny skies and warm temperatures - but with that highly coveted lower humidity. Finally come out of the house without melting, nice to be outdoors weather!

Slow Cooker Pork Roast with Vegetables

Pork roast, slow cooked in the crockpot and simply seasoned with garlic salt, freshly cracked black pepper, Cajun seasoning, thyme and sage and topped with cream of mushroom soup.

While slow braised beef roast would be my husband's top favorite roast, a pork roast rules in my eyes, and the slow cooker is a great vehicle for it for sure.

Though most people think of the cut only for smoking or slow cooking for pulled pork sandwiches, I love a good pork shoulder or Boston butt prepared as a roast. This preparation is also great with a leaner pork loin however.

I purchased a pork shoulder, just under 9 pounds, at the Commissary the other day with the intention of making some kind of crockpot cheater pulled pork with it. I had seen Sandra Lee do a substantially smaller pork butt on Food Network recently, cooking it in a mixture of barbecue sauce, chicken broth and mustard. It looked really good, though I wondered if using a sauce with all that fat produced from the pork would really make a difference.

Smothered Pork Roast with Rice

This Smothered Pork Roast recipe is as simple as it comes. A seared pork roast, seasoned with salt and pepper, smothered in a gorgeous garlic, rosemary and thyme infused gravy, and braised in a covered Dutch oven, low and slow. The original recipe called for a boneless pork butt or shoulder, but I could only find a 7 pound bone-in pork shoulder, and even that just barely squeezed into my Dutch oven. The downside to using the bone-in roast is that there is less meat, but it was enough for the two of us. It is a heavenly way to utilize a cut of pork that is most often reserved for pulled pork sandwiches though it can be used for other cuts as well. The fragrance of it will surely bring you back to grandma's kitchen and the flavor is just simply pork perfection.

This pulled pork recipe came about when recently, I posted over on Facebook a slow, stovetop simmered, cheater pulled pork I learned last summer. It is done on the top of the stove, and even though it's completely unconventional, it produces an incredibly flavored pork The Cajun and I instantly fell in love with.

Several Deep South Dish Facebook family members reported they did a similar pork using their crockpots. Well, y'all talked me into investing in a new slow cooker {since the one I owned is at least... ahem... 33 years old} and the first thing I set my mind to doing was some kind of pork barbecue.
