Charleston Cheese Dip

I was poking around in my Trisha Yearwood's Home Cooking cookbook again, and ran across this recipe for her Charleston Cheese Dip. Trisha said it was her take on a dip she had while on tour one year with a stop in Charleston.

Hotels generally leave amenity baskets for celebrities in their rooms and this time, the basket was accompanied by a cheese and cracker tray featuring this cheese dip, made from Cheddar, Monterey Jack and cream cheese, and topped with bacon. A super cheesy dip? With bacon? Oh yeah, y'all know this dip lovin' gal is so there, and what an excellent addition to the dip collection, especially with the Super Bowl right around the corner.

Of course, my wheels started turning and I immediately thought of a few changes I thought would only make this dip even better than it already sounded. Trisha's recipe used a full block of cream cheese, and added Monterey Jack cheese along with some Cheddar. I decided to change the Monterey Jack to Swiss and use more of it, plus I threw in some chopped pickled jalapeno and my familiar Slap Ya Mama seasoning, you know... to help boost the bam.

It is a super easy dip recipe to throw together too. Cream together softened cream cheese with some mayo and Cajun seasoning. Add the jalapeno and green onion, setting aside a small pinch of green onion for garnish, and then mix in the Cheddar and Swiss cheeses. Turn out into a buttered pie plate and smooth out.

Trisha's recipe used just a handful of crushed dry Ritz crackers on top, but I decided to butter up some Panko and give the dip a nice thick layer of that as a topping.  Bake at 350 degrees F for about 20 minutes, remove, top with crumbled bacon, garnish with that reserved green onion and serve!

Thanks to the fine folks at Hormel and the Foodbuzz Tastemaker program, I had a package of shelf stable Hormel Real Crumbled Bacon at the ready. What a convenience, and I love that it is 100% real bacon. Sure came in handy for this - so you might want to grab a bag at your grocery store for your game day preparations! C'mon you know there's gonna be bacon involved this weekend, and it's a great time saving product that tastes great, so you won't be sorry.

And one last thing. I know y'all are laughing at me with that celery stick up there as if I'm trying to make up for all that cheese by eating this dip on a celery stick. Well, the truth is when I decided to make this I had plenty of celery, but no fancy crackers for a photo op. Okay, okay. Here's a close up of the dip on a homely little ole saltine.

Recipe: Charleston Cheese Dip

Cook time: 20 min

Total time: 35 min
Yield: About 4 to 6 servings

  • 1/2 cup mayonnaise
  • 1 (8 ounce) block of cream cheese, softened at room temperature
  • 1/4 teaspoon of Cajun seasoning (like Slap Ya Mama)
  • 1 green onion, sliced
  • 2 tablespoons of chopped pickled jalapeno
  • 1 cup of shredded sharp cheddar cheese
  • 1 cup of shredded Monterey Jack or Swiss cheese
  • 1 tablespoon of butter, melted
  • 1/2 cup of Panko bread crumbs
  • 1/4 cup of cooked crumbled bacon

Preheat oven to 350 degrees F. In a medium bowl, combine the mayonnaise, cream cheese and Cajun seasoning, until well blended. Reserve a pinch of green onion for garnish. Add the jalapeno, remaining green onion and the Cheddar and Swiss cheeses and blend together. Transfer the mixture to a buttered standard glass pie plate or a small oblong shallow baking dish.

Toss panko bread crumbs in the melted butter with a fork and sprinkle over the top of the dip. Bake at 350 degrees F for 20 minutes, or until heated through and top is golden brown. Remove and sprinkle the crumbled bacon on top and garnish with the reserved green onion.

Serve immediately with crackers, chips, or vegetables.
