Instant Pot Pot Roast

My favorite way to cook a pot roast is always going to be low and slow whether on the stovetop or in the oven. You just can't beat the result and the aroma while it's cooking is enticing.

When I'm in the mood for a roast but a little more short on time, I've become a big fan of using the Instant Pot for a pot roast too, but I've certainly learned one thing.

Even with the Instant Pot, you still can't rush the process.

I love soup, and yes, around here it is usually featured as a main dish meal, accompanied by some kind of bread, crackers or a sandwich, rather than just a starter soup course to go along with an entree of some kind.

For the most part, I want those soups to be quick and easy, although there are times I do put a little bit more of my time into them.

Hot Roast Beef with Gravy - Instant Pot

Instant Pot Hot Roast Beef

Who remembers a hot roast beef? You don't hear much about them these days, but basically, it's an open-faced roast beef sandwich, served over plain or toasted white bread, with a scoop or two of homemade mashed potatoes... and plenty of gravy. Typically a leftovers meal, I had a very specific craving for one, so I had to start from scratch and make a roast!

One of my favorite things to cook in a slow cooker are roasts, but I've really fallen in love with using my multi-cooker/pressure cooker for them. Instead of taking 3 hours on the stovetop, or even longer in a crockpot, you can have a fork tender chuck or rump roast on the table in about an hour.

Slow Cooker Mississippi Roast ... My Way

A flavor filled roast, made using a rump or chuck roast, but with my own signature and minus the full stick of butter. A moist, tender and delicious roast with a wonderful gravy and a nice spicy bite.

Slow Cooker Mississippi Roast ... My Way

There's a roast blazing across the interwebs and the world of Pinterest called "Mississippi Roast," and if you google it, you'll find it everywhere. It's the roast that broke the internet.

In the beginning of making this, like most others, I had no idea where the recipe began, or even how the recipe got the name Mississippi attached to it, because best I could figure, somebody who threw it together one day must have just happened to be from Mississippi.

Well, I'm here to set the record straight on that!

Featured Reader Recipe - John's Yankee Pot Roast

John's Yankee Pot Roast

When a reader, John, shared this recipe with me, I have to say that I was intrigued by his use of canned vegetable soup for a Yankee Pot Roast. Originally from Wisconsin, John was stationed in South Carolina in the 70's and apparently decided to stick around! He refers to himself as a "Southernified Yankee."

Three Envelope Crockpot Roast Beef

A well-loved recipe, this Three Envelope Roast could possibly be the easiest roast recipe ever. Made with one envelope of dry onion soup mix, one envelope of dry Italian dressing mix, and one envelope of dry brown gravy mix and a little bit of water - dump it all in a crockpot and that, folks, is it!

Slow Cooker Italian Pot Roast

Chuck roast, slow cooked in beef stock, onion soup mix, onions, mushrooms, Rotel tomatoes, served over rice.

Slow Cooker Italian Pot Roast

On my last trip to the grocery store I found myself in the mood for beef apparently, because beef cuts were all that I picked up that trip. Guess after all the chicken and shrimp lately, my body was looking for some meat!

Crockpot Coca Cola Roast Beef

This roast beef made with good ole Coca-Cola, came about thanks to the great folks behind the Deep South Dish Facebook family who have given me encouragement to maybe step outside of the oven a bit and make use of this handy appliance. While I do have a scattered few slow cooker recipes up here, I have just never been a big user of one.

Roast Beef Po'Boy with Debris Gravy

Po'boys are the mysterious sandwich of the South for sure.

Over here in Mississippi we make ours just a tad bit different than our sister state, Louisiana. We have this whole "dressed and pressed" thing we like over this way. You can read more about what exactly a po'boy is, along with a mild southern style hissy fit about what a po'boy is not, right here. I won't rehash all that here.

Classic Old Fashioned Pot Roast

A good old fashioned pot roast calls for a chuck roast in my eyes. Chuck is an economical cut of beef that is pretty tough and fatty, but very flavorful, and requires a low and slow braise for several hours in just a bit of liquid, making it a great roast to plan for Saturday or Sunday dinner for most of us. While you certainly can cook it in a slow cooker, and I have, I love letting it simmer nice and slow on the stove or in the oven the most.
