I realize we're on the waning side of in-season summer corn, so while you might just find the last of some fresh corn at the market, as I write this it's September and we're heading into fall.

Think about it. September.

Meaning Thanksgiving and Christmas are right around the corner and this is a great side dish for either of those holidays. Others too and, it works well with a slow cooker! I'd say worth a bookmark.

If you spend any time on social media you may have seen a dip going around recently called "boat dip." There are now such a wide range of variations of that dip out there that it's hard to say what the original recipe ingredients and ratios were, or even who the originator was.

The only thing that seems in agreement is that it was called boat dip because it was a dip that was routinely made to carry on boat trips for that family.

I actually tried quite a few of those variations myself and this one is the one that I settled on.

There's nothing better than fresh corn on the cob in the summer and hopefully you put some up in the freezer for this super easy, winter holiday side dish. If you didn't, don't fret.

It's perfectly wonderful with good ole store-bought frozen corn and you can even save yourself a pretty penny by using a generic brand. The plus with starting with frozen corn, is that it saves you a few steps too, making it the easiest ever creamed corn and a breeze to throw together.
