I realize we're on the waning side of in-season summer corn, so while you might just find the last of some fresh corn at the market, as I write this it's September and we're heading into fall.

Think about it. September.

Meaning Thanksgiving and Christmas are right around the corner and this is a great side dish for either of those holidays. Others too and, it works well with a slow cooker! I'd say worth a bookmark.

I especially love the boiled or fried versions, which frankly, is what I make the most, even when my original intention when I bought a new head of cabbage was to write something new for the website!

Unbundled Green Beans with Brown Sugar Sauce

No doubt at some point you have seen or made bacon wrapped green bean or asparagus bundles. Marinated with either a brown sugar sauce or a seasoned olive oil vinaigrette, then wrapped in bacon and broiled, baked or grilled, they are indeed delicious, but pretty time intensive to make. This recipe gives you the flavor, in a casserole form, without so much work.

I hear from a reliable source that squash is starting to come in! I didn't plant any this year so if you're trying to get rid of some, stop on by with a bag and I'll gladly take some off your hands!

For some reason, I never see pattypan squash around here, not even at the farmer's market, but yellow squash happens to be my favorite in the summer squash family. I like it far better than zucchini, though I do eat both. I think yellow is a little sweeter and more mellow than zucchini but both make pretty good zoodles.

Corn Pudding suffers a similar identity crisis as corn casserole. What defines it is most often what you grew up with and nobody makes any of it the same way.

What some folks call corn spoon bread, others call corn casserole... and vice versa.

Classic Corn Casserole

Corn casseroles seem to have an identity crisis going on in this day and age.

There doesn't seem to be a division anymore between what folks define as corn casseroles, corn spoon bread and corn pudding, so much so, that what once made each of these dishes unique from the other, has been completely lost.

Because this dish is heavy in corn, but lighter in binders and eggs, I consider it to be a corn casserole. You may know it as something different, but there is one thing for sure. It gets gobbled up.

I believe that there are far more people who love broccoli and cauliflower than who don't, although those who don't are certainly more vocal about their dislike of one, or the other, or both. Okay by me, because they don't know what they're missing if you ask me, and that means more for those of us who love them.

One of the most popular canned peas in this part of The Deep South is a petit pois variety, literally translated from French as little pea. They are the tiniest, sweetest little baby peas and not at all cheap either, but when you realize just how many peas have to be shelled to just feed a single person, like fresh crabmeat and pecans, you appreciate the labor that goes into them and happily pay the price because you understand.

The petit pois have a very short fresh season, only a few weeks in early June, so we enjoy them mostly canned down here. These are the tiny little peas that usually grace the southern holiday table and thanks to their delectable sweetness, I'm not at all surprised.

We do love sweet in The South.

I don't watch QVC as much as I'd like to, well except during Christmas time, not because I don't love it, but because I do. I would be flat broke is all! At any rate, Terresa Ray was recently filling in as on-air host for two of my favorite Mississippi "Cookbook Ladies" Gwen McKee and Barbara Moseley of the Best of the Best cookbook series fame and the company that published my own cookbook!

She was on the 'In the Kitchen with David' segment to do a pre-sell on their upcoming and QVC exclusive August release, Recipe Hall of Fame Fresh from the Farmers Market cookbook. They sold out thousands of cookbooks on that show very quickly.

Yes, I know... it's hot out, but if you don't mind turning on the oven, this is a great way to enjoy those fresh summer squash and garden tomatoes.

You could eliminate the bacon if you like (but why would you want to?!), but don't skip the panko if at all possible - it provides a wonderful crunchy contrast to the tender vegetables.

This Ultra Cheesy Hash Brown Casserole was born from a mistake, but in the end it proved to be a good mistake!

I had been trying to cook through my pantry and freezer to sort of spring clean out the old, so I can bring in the new. One thing that was taking up space and constantly falling out on me when I opened the freezer, was a one pound bag of frozen hash brown potatoes, so I decided to make a hash brown casserole as a side dish for supper one evening.

My Way Spinach Bake and The Original Spinach Madeline

A classic spinach casserole based on Spinach Madeleine, a simple spin on Creamed Spinach, typically made with spinach, sauteed vegetables and a white sauce.


The original Nevill recipe starts with making a roux, and then adds in 1/2 cup evaporated milk, with 1/2 cup of the liquor from squeezing out the spinach. It also called for the now discontinued Kraft garlic cheese roll {or the also discontinued jalapeno roll, depending on which "original" recipe you are endeared to.

Had some cabbage on hand so decided to do an au gratin for y'all. If you're anywhere from around the lower Deep South area, you probably know this dish as Choux Glorieux, or Glorious Cabbage. I am happy that it is "casserole season," but I hate the way that casseroles photograph - the pictures just do not ever do justice to the dish - but don't let that lead you. Most casseroles are outstanding and this one is no exception.

I grew up with two basic potato casseroles. One that was made with a buttery milk sauce that my Mama called scalloped potatoes; the other made similar but adding in cheese, that we called potatoes au gratin. I used to love it when Mama made them. Both are just simply heartwarming and delicious and a perfect potato side dish for cooler weather.

 This Squash Casserole recipe is probably my hands-down favorite way of eating all that great summer squash that grows like a weed in the garden. Growing up, I remember my aunt always having a vegetable garden - a pretty good sized one at that - and plenty of squash!

Most times when I have ever planted squash it has always seems to come under attack of squash bugs and borers and I end up with dead plants and no squash... grrrrrr. This year the squash has been producing! Ah, the joys of the veggie garden! Ya just never know what's gonna happen I guess.
