Did you know that it wasn't until 1972 that Congress passed an official act declaring Father's Day a national holiday?
According to The Old Farmer's Almanac, however, Father's Day came about in the early 1900s due to the efforts of one woman, Sonora Smart Dodd of Spokane, Washington, who essentially wanted to create a holiday honoring fathers. Dodd, the eldest child of five other siblings, all brothers, and all of whom were raised solely by their father after the passing of their mother in 1898, from complications during childbirth. It was during a church service for Mother's Day that Dodd was inspired that fathers should also have a day of honor. She brought the idea to the minister's association, who agreed and settled on the third Sunday in June. In 1910, the very first, unofficial Father's Day was launched when Dodd and the YMCA honored their first group of handicapped fathers. Pretty cool, huh?
Since Father's Day is just around the corner, I thought I'd share with you a great meal you might want to consider for the favorite dad in your life.
How about a nice appetizer to start off with. Start the day before marinating the
West Indies Salad and you can serve this beautiful
Crab Martini to start off the meal. Please note, this recipe does include vodka.

Course, in my opinion, the beverage of choice should be
Southern Sweet Iced Tea!
Why not start dad off with a nice grilled vegetable salad? My take on a classic spinach salad, this one is made with oven roasted vegetables, but could easily be converted to the grill. Simply grill the desired veggies and top with this wonderful hot bacon dressing. Pop by

What Dad wouldn't want this
gooey, cheesy garlic bread to go along with that great salad too? Make it easy by wrapping it up and popping it on the top rack of the grill while you're doing those grilled veggies for the salad. Or maybe dad would like some homemade rolls even better - check out

Hands down, I can't imagine too many dads who wouldn't love a good grilled steak! I suggest a good cut of ribeye steak - it's the best in my little ole opinion. Here's my recipe: Sprinkle the steaks on both sides with a hefty dose of Worcestershire sauce and bring them to room temperature about 30 minutes - don't skip this step! Pop them on a very hot, preheated grill, unseasoned, and grill to perfection, how long will depend on the thickness of the steaks. On an instant read thermometer inserted into the side of the steak, you'll want to shoot for around 120 degrees F for rare, 125 for medium rare, and 130 for medium. Remember there is always residual cooking, so remove your steaks about 5 degrees early! Let the steaks rest tented loosely with aluminum foil, so the juices redistribute. Want something different? homemade cold pressed iced coffee, with a man-sized splash of Kahlua, Irish Cream, or Amaretto, for a nice adult indulgence.
