You've probably seen some version of this viral "Swamp Potatoes" recipe on the socials here lately, but this combination of ingredients ain't nothing new to those of us who live in the Deep South!

In fact, if you grew up anywhere near the Gulf Coast, you already know there’s nothing more comforting than a pot of potatoes, andouille and green beans simmering away on the stove. It's been a regular meal from back in the day, and it’s still a favorite now - I can easily make a meal out of it myself. 

But as social media goes, give it a catchy name, post it online, and suddenly old classics feel brand new again!

Cold weather always has a way of sneaking in one last time before spring settles on the Gulf Coast, and on those days I want something warm, smoky, and deeply comforting without spending all afternoon in the kitchen.

This Andouille Vegetable Stew was exactly that - a simple pot of goodness built on browned sausage, tender vegetables, and a dark roux that gives the broth its rich, Louisiana-style depth.

It’s hearty enough to serve as a full meal, but still light and vegetable‑forward, which makes it perfect for this in‑between season when we’re craving comfort but also looking ahead to brighter days.

There are those days where you know you need to eat, but you just don't really feel like cooking or even know what it is that you want!

Enter one of my favorites. Fried potatoes. 

I can certainly make a meal of those alone, or really any other potato central dish to be honest - set a pot of those smothered potatoes in front of me and I'm a happy gal - but if you want to get in a little protein too, it's excellent with some sliced smoked sausage or hot dogs tossed in and I make it regularly because I love it!

The combination of flavors in this dish is one of my favorites, especially when I'm not much motivated to cook, because it's such an easy dish to throw together.

This version includes a hickory smoked Conecuh sausage, tender yellow potatoes and frozen mixed peppers with onions, seasoned, tossed with extra virgin olive oil, dotted with butter and baked. It's simple, easy, tasty and super flavorful.

Ratatouille and Sausage Bake

The best of late summer and early fall vegetables - eggplant, zucchini, yellow squash and sweet bell pepper - tossed with an olive oil, vinegar and herb-based dressing, diced tomatoes, garlic, chunks of red onion and sliced smoked sausage, then baked.

Not so much.

I sure love a good soup and even better when it's one of those quick and easy versions, but one that still tastes great!

Soup is pretty easy to make, no doubt about that, and you don't really even need a recipe.

In fact, some of the best soups come out of refrigerator or freezer leftovers thrown together! Trouble is though, trying to recreate the same flavor the next time if you find you really enjoyed that soup!

Hayes Star Brand Bean Soup Mix - Sausage, Beans and Rice

Tonight, we are having ribeye steaks and frankly I don't generally do much with those.

Usually I sprinkle just a little bit of Worcestershire sauce on both sides, let 'em come to room temp and then grill them on the outdoor grill. Add a salad, and a starch like some potatoes and we're good to go for dinner. 

I came up with this bean recipe as another way of using those Bean Soup Mix packages, like Hayes Star Brand, that showed up in co-op boxes fairly regularly.
