Instant Pot Chicken and Rice

Instant Pot Chicken and Rice


This is one of those quick, easy, tasty meals that you can make when you aren't highly motivated to cook.

Yes! Believe it or not, that happens to me too sometimes.

That's one thing that I love about the Instant Pot - or any other branded electronic pressure cooker for that matter. That one appliance can make a quick and easy job of making a meal, unlike its cousin the slow cooker, which I rarely use because of the advance planning, early start and length of time required.

The Instant Pot is perfect for folks like me who mostly fly by the seat of our appetites and aren't very good at advance planning.

I find the Instant Pot to be far more rice and pasta friendly too and perfect for a dish like this.

Here's how to make my Instant Pot Chicken and Rice.

Now I did start off thinking I was using a bag of frozen boneless, skinless chicken thighs, but what I found in the freezer that was given to me from Dad's house, was a bunch of mixed pieces of chicken. I'm guessing Dad had intended it for gumbo, but that's what I had and what I rolled with here and the mish mash worked out just fine. Use what you got!


While you can use wings and legs whole, cut any boneless chicken pieces - which is what I would recommend - into large, bite-sized pieces. Add olive oil to pot and set to sauté.


Season chicken with salt and pepper, add to pot and lightly brown on both sides.


For added flavor, I'm adding just a bit of this handy, dandy pepper and onion blend frozen mix that I usually have on hand most of the time, though you can certainly use some fresh sweet peppers.


Sprinkle onion powder, garlic powder, paprika and Italian seasoning over top.


Sprinkle rice all over.


Sprinkle peppers on top of the rice.


Pour in chicken stock.


Seal pot and set to manual for 8 minutes. Let pressure release naturally for 10 minutes, then carefully release any remaining pressure, open, fluff with a fork and give a stir. Taste and adjust seasonings as needed. Garnish with dried parsley if desired.
