Meatloaf Patty Melt

Meatloaf Patty Melt

I am a big fan of meatloaf. Always have been! And let's be frank here, who out there doesn't enjoy that next day meatloaf sandwich?

For some folks it's actually their favorite part of meatloaf, so how about we make those sandwiches intentionally to begin with, and,.. how about we make them in the form of one of my favorite hamburger sandwiches? A patty melt, yes indeed!

First step is to caramelize some onions, and I use a little cooking oil with butter for that.  Add sliced onion and cook over medium high, stirring regularly, for about 5 minutes or until softened. Reduce heat to medium and continue cooking, stirring regularly, until caramelized, about 15-20 minutes. Take care not to let them burn! Use a slotted spoon to remove the onion; set aside.


For the meatloaf patties, you can use a "meatloaf mix" which is usually a blend of beef, pork and veal, although it also comes with a higher price tag than plain ground beef, especially when you can grab a family or value pack when it's on sale. I like to buy the larger packs of ground beef and use my vacuum sealer to freeze it in portions, so that's my preference.

I mix ground beef with an egg, breadcrumbs, some finely minced green bell pepper, a little bit of milk and a mixture of seasonings.  Pull off even balls of dough for the amount of bread you are using, then shape them into thin, oval or round patties to fit. Place into the same skillet and turn the heat to medium high. Cook, in batches, until the patties are well browned on the underside, and mostly cooked through.


Flip, scatter onions on top of each patty and top with a slice of cheese. I used American cheese here because that's what I had on hand. Use whatever your favorite cheese is. Cover skillet, remove from heat and set aside.


While the patties are cooking, preheat oven to 350 degrees F. Butter a rimmed baking sheet. Place the bottom of each hoagie roll on the baking sheet and transfer a cheese topped meat patty to each bottom. Whisk together the sauce ingredients and spoon sauce evenly between each patty. Add top of roll and wrap the baking sheet with aluminum foil. Place into the oven and bake for 30 minutes.


To crisp up the rolls, uncover and return to oven for about 3 to 4 minutes, or to desired crispness. I used soft hoagie rolls which are long enough to hold two patties and can serve 2 people. Or one super hungry man like The Cajun.

Recipe: Meatloaf Patty Melt

Ingredients
  • 2 tablespoons cooking oil (canola, vegetable, corn), divided
  • 1 tablespoon unsalted butter, plus additional softened butter for the baking pan
  • 2 cups sliced sweet onion
  • 6 hoagie rolls, or other soft rolls
For the Patties:
  • 1-1/2 pounds ground beef (or meatloaf mix)
  • 1 large egg
  • 1/3 cup breadcrumbs
  • 1/4 cup whole milk
  • 1/4 cup finely minced bell pepper
  • 1 teaspoon onion salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon Creole or Cajun seasoning, or to taste
  • 1/2 tablespoon Worcestershire sauce
For the Sauce:
  • 1/2 cup ketchup
  • 1/2 tablespoon Creole or brown mustard
  • 2 tablespoons light brown sugar, packed
Instructions

Heat 1 tablespoon of the oil and the butter in a cast iron skillet. Add the onion and cook over medium high, stirring regularly, for about 5 minutes or until softened. Reduce heat to medium and continue cooking, stirring regularly, until caramelized, about 15-20 minutes. Use a slotted spoon to remove the onion; set aside.

Meanwhile, combine beef with patty ingredients; shape into 6 oval burgers. Add additional oil as needed to skillet and and turn the heat to medium high. Place patties into the same skillet, preparing in batches as needed, and cook until the patties are well browned on the underside, and mostly cooked through. Flip, scatter onions on top of each patty and top with a slice of cheese. Cover skillet, remove from heat and set aside.

While the patties are cooking, preheat oven to 350 degrees F. Generously butter a rimmed baking sheet. Place the bottom of each hoagie roll on the baking sheet and transfer a meat patty to each bottom. Spoon sauce evenly between each patty. Add top of roll and wrap the baking sheet with aluminum foil. Place into the oven and bake for 30 minutes. To crisp up the rolls, uncover and return to oven for about 3 to 4 minutes, or to desired crispness.

Cook's Notes: I used American cheese because that's what I had on hand. Swiss is classic on patty melts, but use whatever your favorite cheese is. You can also double up on cheese by adding a slice of cheese to the bread before topping with the patty.
