Cajun Style Pork Chops and Gravy with Rice

A tender Cajun seasoned pork chop served over white rice and topped with dark roux gravy and sautéed trinity vegetables with green beans on the side.
This cozy Cajun‑style supper is the kind of simple, deeply flavorful Louisiana comfort food that comes together easily on a weeknight but tastes like it simmered all afternoon. Serve it over rice to catch every drop of that silky gravy, and you’ve got a plate that feels like home.

A Classic Cajun Meat‑and‑Gravy Supper

Meat and gravy.

It's that cozy Cajun‑style supper that brings together a protein, simmered in a rich dark‑roux gravy with the classic trinity of onion, bell pepper, and celery.

Often referred to as an etouffee or smothered, it’s the kind of simple, deeply flavorful Deep South comfort food that comes together easily on a weeknight but tastes like it simmered all afternoon.

And like most true Cajun meat‑and‑gravy dishes, the method is as old as the region itself - a straightforward process that works with just about any protein you have on hand, from pork and chicken to beef, sausage, or even game.

One thing that I constantly hear from folks whenever I share any pork chop recipe on social media is "my pork chops are always so dry!"

Back in the day pork was much fattier and could handle a longer cooking time, but today's pork is bred so much leaner that a dry chop is probably caused by overcooking. We just don't realize how quick they cook now!

But the cut can matter too.

I have been buying pork ribeyes for several years now, so I'm always trying different things with them, recipes that will all eventually make their way here.

They do cost a little more and I love the texture and tenderness of the ribeye pork chops, but other than cost, what makes them different?

Pork Chops and Scalloped Potatoes

I can't tell you how many times that I hear "my pork chops always turn out dry" whenever I share a pork chop recipe on social media.

Pork chops are so much leaner today than they used to be and that means they cook much faster and well, folks aren't necessarily used to that! The result? People tend to overcook them, rendering them dry and tasteless!

Cooking that long is no longer necessary with today's leaner pork.

Pork chops are on a regular rotation around here. My husband, aka The Cajun, loves them and he'd probably be perfectly happy if I just fried them all the time, I tell ya!

Gotta admit, yeah those are really good, and I love watching my husband gnaw them down to the bone, but let's be real.

Far as I'm concerned, speaking as a Southern born and bred gal, I think fried food is perfection, and much as we'd like to, well we just can't eat it that often y'all. I'm always looking for different ways to serve my pork chops.

Deviled Pork Chops

The idea for these came from an episode of America's Test Kitchen that I caught on antenna television one day. The ideas were so clever and the pork chops looked amazing!

Of course, I had to put my own little spin on things, though there were some very significant guidance points that I did include in my version.

I really love using an air fryer, especially in this heat. It's way less messy than frying on the stovetop too, that's for sure!

I have mentioned before, but it took me awhile to get on board with them admittedly, but when I did finally, I ended up with several of them! The one that stays out of the pantry and that I use the most is an oven style version though I did use the larger basket style fryer this time.
