Buttermilk Mustard Fried Chicken

Like many Southerners, I love fried chicken, especially when it's prepared well. Although pretty rewarding in the end, it is a little messy frying it at home though and frankly takes practice,  meaning you need to keep making it often to perfect the processes!

You know. Like Grandma did.

For those reasons, lots of folks satisfy those occasional fried chicken cravings with take out these days and while really great fried chicken can be found at sit down restaurants, you can also find it at locally owned gas station counters, at regional grocery store delis like Winn Dixie and Rouses in my neighborhood, at local sit down or take out buffets like Hartz, Cajun's and Broome's and fried chicken places like Popeye's and KFC.

The one problem? Have you seen the prices?

Tomato and Cucumber Salad with Honey Mustard Vinaigrette

Y'all know that I love me some fresh summer cucumbers and juicy, seasonal tomatoes and as salads go, I mostly just toss them with a mix of vinegar and sugar and call it a day. I do love that whole sweet and sour thing and that's the way I combine them most often.

Sometimes it's just simply cucumbers with onions, mostly sweet Vidalias, because it is the season for them too after all, but sometimes a sharp, purple onion is in order instead.

Slow Braised Country Style Ribs

Boneless country style ribs are browned and cooked down with a mirepoix of onion, carrot and celery and slow braised in a vinegar, stock and mustard cream sauce. Serve over mashed potatoes, rice or cheesy grits.

A lot of us prepare country style ribs by cooking them in the oven, or on a smoker or a grill with some kind of sauce, typically barbecue sauce, and I love them that way too, of course... but I'm here to tell you if you have never slow braised them like this, you must!

I know... honey mustard is just, well, honey and mustard pretty much, but recently I had the opportunity to give Colman's dry mustard products (#affiliate) a try and let me tell you, if you want to bump your mustard up above and beyond spicy mustard, yes even those we love so much down here in The Deep South, then you'll want to give Colman's a try.  

One of only three mustard mills in the world that uses a unique blend of brown mustard seeds with white mustard seeds, there ain't a thing mellow yellow about this fiery mustard y'all!

If you're looking for a sauce to enhance pork, this delicious honey mustard sauce made from a mixture of plain ole yellow mustard and sweet honey, with just bit of rosemary, is a delicious addition. Good for basting a variety of meats, but excellent with roast pork and for drizzling over fried pork chops, or even fried chicken strips.  Enjoy!

Spicy Mustard Sauce

2 tablespoons of mayonnaise
1-2 teaspoons of creole mustard with horseradish
1 jalapeno, finely minced

Combine well and refrigerate until needed.
