So, the other day I had a craving for spaghetti.

I know, crazy, right? Mostly folks have "cravings" for sweet things, but me, I'm more of a savory kind of gal, so when I get a craving it's more likely it's for some kind of savory comfort food.

Maybe chicken and dumplings. Or tacos. Lasagna. Or those little burgers like Krystal's. Roast Chicken. Chicken Pot Pie. Homemade Mashed Potatoes. That sort of stuff.

Anyway, this specific time after our recent carb-heavy holiday meal, I was craving meat and more specifically meat sauce. I started to just make my normal semi-homemade spaghetti sauce, but then, I thought...

Meatballs and Marinara

Meatballs and Marinara - Meatballs, tossed in a quick, homemade marinara sauce, topped with mozzarella cheese and served over rotini pasta. Add a side salad and some crusty bread for a fantastic meal!

The Cajun loves meatballs. I swear his eyes literally light up when I say we're having meatballs for supper, without him knowing a thing about how we're having them. Just the word meatballs makes him happy!


Of course, I'm pretty sure he could also finish off a full 3 pounds of them in one sitting, if I let him. He is definitely your quintessential meat and potatoes man, so I do try to "fill in" with things like sauce, maybe some pasta, a little bread and a salad.

Sweet and Spicy Rotel Sauce

This is a wonderful, all purpose tomato sauce, perfect for spooning over meatloaf, or just about any meat, poultry, pork or fish. Made with brown sugar, chunky RO*TEL tomatoes, spicy horseradish mustard and my favorite Cajun seasoning, it's a great balance between spicy and sweet and a perfect accent. We love it, and I think it will become a favorite sauce for you too.

In the mood for spaghetti with a homemade taste, but that doesn't have to simmer all day long?

Okay, so yes, you do get a little head start with canned pasta sauce to start with so I guess you can call this "semi-homemade," BUT... once you add in some very simple but transforming enhancements, you will end up with something that tastes as if you made the sauce from scratch and simmered it on the stove for hours.

I've been making my spaghetti sauce like this for years, and The Cajun loves it!
