Sugar and Spice Cookies

Certain spices just speak to the holidays don't they?

They make their way into a lot of baked goods during the season and just the aroma can stir up some memories of holidays past - those days we all seem to miss and long for in today's trying times.

Most spiced cookies use molasses though, and the flavor of molasses can be a bit overwhelming. I didn't really want that depth of flavor in these cookies. I was searching for a lighter sugar cookie with just a hint of the flavors of the holiday.

Sage Pork Roast with Apple Pan Sauce

This is my second pork roast posted - the first one has an amazing spicy and sweet onion sauce and has been my favorite way of doing pork roast for years.

This one, is a simple roasted pork, crusted with a layer of herbs and seasonings, resting in a hot tub of apple juice that makes one mighty fine pan sauce and gravy.

Spicy Ginger Garlic Chicken

A yummy way to jazz up chicken without adding a lot of fat.

I used some of those grocery store, super gargantuan, bone-in chicken breasts here and then just sliced them up  to serve, but this works well with a cut-up whole chicken, or thighs and legs.

If you're looking to cut back on fat, remove the skin. These are also great grilled.
