Shrimp Potluck Pasta Salad

Shrimp Potluck Pasta Salad


I know, I know. Guess I've been posting a lot of salads here lately but - it's what I've been eating y'all, and, well, there will probably be more coming until this heat turns off. Will fall ever get here?? I'm really ready for some of those fall and winter comfort foods!

Anyway...

Pasta salads with shrimp have been showing up at potlucks and church suppers around here for as long as I can remember, and this one is a bright, easy favorite when you need something quick, cool, and satisfying. I wrote this one to be more at home friendly, but of course just increase recipe as needed if it's a potluck or party!

I pulled this together using some already‑cooked extra‑jumbo shrimp I had stashed in the freezer - just a quick chop and they were perfect. Add in crisp veggies, a good bottled Italian dressing (I used Imo’s creamy house Italian), and of course that magical McCormick Salad Supreme, and you’ve got a chilled pasta salad that tastes like summer in a bowl. It’s simple, colorful, and always a crowd‑pleaser.

Here's what you'll need to make my Shrimp Potluck Pasta Salad:
  • 2 cups rotini pasta
  • 1 cup chopped tomatoes, drained
  • 1/2 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/2 cup seeded, quartered and chopped cucumber
  • 1/2 cup halved black olives
  • 1/2 cup McCormick Salad Supreme Seasoning #ad, or to taste, divided
  • 1 pound cooked peeled and deveined small to medium shrimp
  • 1/4 to 1/2 cup bottled Italian dressing (I used creamy Imo's house dressing) #ad

Here's how to make it!

Cook pasta according to package directions, drain and rinse. Set aside to drain well. Of course, I used my Fasta Pasta #ad microwave cooker! While that's cooking chop tomatoes and place into a colander to drain.


Transfer cooked and drained pasta to a large, lidded storage bowl.


Peel the cucumbers, split lengthwise and run a spoon down the centers to seed them. Chop.


Top pasta with tomatoes, onions, bell pepper, cucumber and black olives.


Give it a toss.


Add half of the Salad Supreme.


Give it another toss.


Add shrimp. I used some already cooked but unseasoned, 16/20 colossal shrimp from Geoffrey Zakarian's cocktail shrimp on QVC, so I cut them into thirds.


Note: If you are using already seasoned shrimp, say from a recent shrimp boil, you may not want the additional seasoning. Taste first! Top with remaining Salad Supreme; toss


I recommend using a creamy style Italian dressing for this pasta salad and I'm using Imo's Pizza's House Italian (#ad) but use whatever your own personal favorite is.


Add 1/4 cup of the dressing.


Toss, adding additional dressing as desired.


Cover and refrigerate for at least 1 hour to allow flavors to develop. Taste and adjust seasonings and add additional dressing as needed for serving. This is a Tupperware bowl I recently bought and y'all... I'm a sucker for anything Tupperware, especially when it's these Heritage Vintage (#ad) pieces!


Delish! Y'all I confess. The Cajun doesn't do pasta salads, not at all, but I plowed through this one so fast. 


This Shrimp Potluck Pasta Salad is one of those dishes that only gets better as it sits, making it ideal for gatherings, meal prep, or those just because “I need something fast” days. Like right now.

The flavors mingle beautifully, the shrimp stays tender, and that Salad Supreme gives it the little something extra folks can never quite put their finger on. That stuff is like a secret weapon for salads y'all so you should keep it on hand!

Keep the salad chilled until serving and better yet, get one of those salad chilling bowls (#ad) that carries ice in the bottom. Game changer!

Just before serving give it a quick toss and adjust the dressing to your liking. Easy, reliable, and downright delicious - just the way we like it down here.
