A vintage appetizer made with a seasoned Boursin-style cream cheese filling and pickled okra, rolled up in slices of luncheon ham and sliced.
Pickled Okra Roll Ups
We're going old school here y'all!
I know some of you won't care for these because, well... okra. It's one of those somewhat divisive foods that folks either love or hate. More for me if you're in the latter group, because I love it!
Those of us who do love okra and are of a certain age, will likely remember this party appetizer from year's past. I'm not sure exactly when it became popular, but I seem to remember it from back in the 70s.
It's made with pickled okra, a condiment that I personally keep in the fridge all the time, along with sweet and dill pickles and olives, to snack on!
This appetizer is akin to the tortilla pinwheels everybody knows and loves, except that luncheon ham, instead of tortillas, provides the wrap. Inside is a Boursin-style mixture of seasoned cream cheese, butter and cheeses and pickled okra, all firmed up in the fridge, then sliced before spreading on a platter. You can also substitute pickled green beans, asparagus or pickle spears.

Here's what you'll need to make my Pickled Okra Roll Ups:
- 1 (16 ounce) jar pickled okra
- 1 (12 ounce) package luncheon ham (rectangular shaped - about 12 slices)
- 1 (8 ounce) package cream cheese, softened at room temperature
- 1/4 cup (1/2 stick) butter, softened at room temperature
- 1 tablespoon dried minced onion
- 1 teaspoon dried parsley
- 1 teaspoon Creole or Cajun seasoning, or to taste, optional
- 1/4 teaspoon freshly cracked black pepper
- 1/8 teaspoon garlic powder
- 1-1/4 teaspoons Italian seasoning or equivalent dried mixed herbs (oregano, basil, dill weed, marjoram and thyme)

Here's how to make them!
Drain okra; set aside. I have several brands of pickled okra that I enjoy and I'm using Old South brand (#ad) here.

Separate ham slices and pat dry; set aside. You should have somewhere around 10 to 12 slices.

Cream together the cream cheese and butter until well blended.

Add the seasonings.

Blend together.

Divide cheese mixture evenly over all of the ham slices.

Remove ends from the okra.

Place 1 to 2 pods (depending on their size) lengthwise on one end of each slice of ham.

Roll up tightly.

Place into a covered container, chilling until firm.

When ready to serve, remove from fridge and slice into bite-sized pieces.

Transfer to a platter and enjoy!

By the way, this is also a great filling for tortilla pinwheels too, with or without the okra. Add the cream cheese filling to the tortilla, top with the ham and okra as above, roll and refrigerate to set. May also chop up the okra in the filling.
