Heaven on a Cracker or a Chip - Bacon Cream Cheese Dip

Heaven on a Cracker - Bacon Cream Cheese Dip


New Year's Day food is just about played out in the house. I made both my black-eyed peas and the cabbage with sausage and tomatoes, plus the rice of course, in my Instant Pot! Well, Instant Pots because I had three of them going!

Yesterday though, The Cajun and I were enjoying the opening of NFL playoffs (quite exciting they were), so I thought I would make a dip I've been wanting to try forever and kept forgetting about. It's a variation of a recipe from one of the Sweet Potato Queen's books {affil link}, that she calls Heaven on a Cracker, and it is rich and delicious.

That recipe calls for Miracle Whip instead of mayonnaise but I rarely buy that, so I just used good ol mayo. Now, yes I know that they aren't the same. Miracle Whip isn't mayonnaise at all in fact, but is instead a salad dressing. There are plenty of "how to make regular mayonnaise taste like Miracle Whip" hacks out there on the internet, though I don't know if any of them are an accurate copy.

I was lazy and used what I had on hand, and besides that, I'm more of a mayo gal than a Miracle Whip gal anyway, so I just winged it with my mayo. It tasted pretty darned good to me! Another change I made was to use Monterey Jack cheese instead of Swiss, because that's what I had in the fridge from making my Green Chile Cheese Squares for New Year's.

There's not a whole lot of anything to making this dip. It's about the easiest one I've ever made. As always, you'll find the full recipe text, with measurements and instructions, a little further down the page. Just scroll or swipe past the chatter and photos.

Just mix up 2 (8 ounce) blocks of room temperature softened cream cheese, with mayonnaise, shredded cheese and green onions and spread into a microwave safe bowl. I had pre-cooked my bacon and had it in the fridge already, hidden from my husband, because there is no cooked bacon safe around him. Just use your favorite method to cook bacon.


Although the original recipe called for 16 slices of bacon, I cut that back a bit but when I do this many slices of bacon, my favorite method is an oven, or lately my oven style air fryer. It depends on the wattage of your air fryer and the thickness of bacon you're using, but 370 degrees F for 8-10 minutes works for me, flipping or swapping trays after 5 minutes. Mix together the crushed crackers and crumbled bacon and sprinkle evenly on the top of the dip. By the way, I'm making a half recipe here for the two of us.


Microwave on high 2-3 minutes depending on your microwave wattage. Serve with tortilla chips, crackers or corn chips.
