Cinnamon Honey Baked Apples with Walnuts and Raisins

Cinnamon Honey Baked Apples

In December, I purchased the Holiday Mixed Fruit gift box special along with the Christmas box for my Angel Food Ministries boxes. The fruit special cost $26 and had 44 pieces of beautiful, juicy and delicious fruit, anjou pears, ruby red grapefruit, juice & navel oranges, tangerines & tangelos, and 16 apples, 4 different varieties. I thought that it was an amazing value! I used some in recipes like my pusharatas and in my apple cake, gave some away with my other sweet holiday goodies, plus we've eaten some ... yet look at this huge bowl full that we still have left!

I can't bear for this to go bad, so I'd better get busy coming up with some ideas to use up all this fruit! I decided to start this morning with some baked apples. I used the Red Rome today.

It's super easy to make these too. Simply wash and scrub the apples and cut away just the upper part of the peeling. Core the apple about 3/4ths the way through, but make sure you don't cut all the way through. If your apples aren't level, you can also shave off a bit from the bottom to make them stand up straight. Scoop out the insides of the apple core and then stuff with all the goodies! Drizzle with honey and bake at 375 degrees for 30 to 40 minutes or until tender, basting occasionally.

Recipe: Cinnamon Honey Baked Apples with Walnuts and Raisins

From the Kitchen of Deep South Dish
Prep time: 10 min |Cook time: 40 min | Yield: 4 servings

Ingredients
  • 4 medium baking apples (Golden Delicious, Rome Beauty, etc.)
  • 2 tablespoons of unsalted butter, at room temperature
  • 2 tablespoons of brown sugar
  • 1 teaspoon of cinnamon
  • Small palmful of chopped walnuts, plus extra for topping
  • Small palmful of raisins
  • Pinch of salt
  • Honey, to drizzle
Instructions

Preheat oven to 375 degrees. Spray a pie plate or square pan with non-stick cooking spray. Wash apples and cut into the stem of each, using a spoon to scoop out the core and seeds, but taking care not to dig or cut through the bottom of the apple.

Mix together the butter, brown sugar, and cinnamon until smooth. Add the walnuts and raisins, stir and divide the mixture equally among the apples, stuffing the center of each. Place into the prepared pan.

Top each apple with a sprinkle of chopped walnuts and press them into the mixture. Give a generous drizzle of honey over the top of each apple. Add just enough water to the pan to cover the bottom and bake at 375 degrees for 30 to 40 minutes or until tender, basting occasionally.

~Cook's Notes~

Crockpot: Place the prepared apples in a slow cooker and add 1/2 cup of warm water all around apples. Cover and cook on low for about 6 to 8 hours, or until the apples are tender.
