If you've been around my blog any length of time, you already know I'm far more of a savory cook than I am a baker. Primarily that's simply because I'm not a huge sweets person.

It's not that I don't enjoy sweets because I absolutely do, and those beautiful desserts that pass by us all on social media certainly get my mouth watering, but I'm more likely to crave a bag of potato chips over something sweet.

I'm just more of a salty gal!

Buttermilk Banana Snack Cake


I am not a baker. Y'all pretty much know that if you've been hanging around this blog any length of time.

I'm much more of a savory home cook and baking has just never been my thing so I don't bake much and really, you kind of have to bake regularly in order to build experience in it!

So funny though, but I broke all of the known rules of cake making with this snack cake, which is probably why I'm not much of a baker!

There are a few pumpkin pudding recipes out there, but for the most part, they are just that. Pudding, with pumpkin puree, very often including a box of pudding mix, and usually prepared in individual custard cups.

This, is not that.

Although I do have a few layer cakes I've done over the years, I'm really not a baker.

Mostly they're not very pretty, though they're certainly tasty!

The cakes I make most often are simple pan cakes, bundt cakes, or smaller, snack-sized versions, rather than tall, multi-layered cakes. I'm not a big fan of super sweet icings on any cake either, and the truth is, I usually scrape it off! I know. Kind of cake blasphemy isn't it? Most frostings are just too sweet to me.

Lazy Daisy Cake

Some of you will fondly remember this cake from your mother or grandmother's kitchen from long, long ago. Others of you likely have never heard of it.

Back in the day, dessert was as much a part of the supper plate as were meat and three, and this cake often made an appearance. Called Lazy Daisy Cake, and sometimes Busy Day Cake, because it is just simply so easy to throw together, it is really just a very basic, old fashioned, boiled milk pan cake.

The cake itself is wonderfully tender and light, but what sets it apart, is this lovely, crunchy, broiled caramel and coconut topping.
