C'mon now y'all... what's not to love about a chicken salad with avocado, bacon and pecan?

Well, I for one can attest - it is delicious!

I've noticed when engaging on social media that a lot of folks favor and have one signature chicken salad that they make all of the time and that most everybody knows them for. It's the one that they always bring to events.

I guess in that case, mine would be what I call my deli-style version, a very basic but delicious version, though I've made multiple variations of that one over the years, this being one of them!

I am a big fan of potato salad, and while I make the more classic, southern-style potato salad most often, I love all different kinds, and I love experimenting too.

Well, except mustard potato salad.

And when I say mustard I mean like heavy mustard based, and not the little dab of mustard that I do like to include in mine. For some reason, that heavy mustard just doesn't appeal to my taste buds at all, though I know some folks absolutely love it.

Guacamole, made with a little Deep South regional influence, incorporating some spicy Louisiana flavor.

I love avocados and I especially love that they have moved into the mainstream of eating everywhere nowadays, even here in the Deep South! I can remember a time back in the day, when finding a fresh avocado wasn't so easy around here. Mostly we were forced to that neon green, pre-made guacamole in a plastic container from the dairy case, when building things like our layered Mexican dip. Fresh is certainly so much better.

Now... right out of the gate, I want to say that I know somebody reading this will likely get all up in arms about this being called "Cajun Guacamole." Just relax and roll with it y'all. In fact, go ahead and Google it... turns out it really is a thing.

West Indies Salad is a well loved Gulf Coast favorite, where crab is marinated in oil and vinegar, with minced onion, and covered with crushed ice.

Whether served on a bed of mixed baby greens, in a tomato, spooned onto a cracker or like here, in an avocado, this is a pretty simple vinegar and oil dressed salad, likened to the popular sweet & sour cucumber salads so loved in the south, but made with crab instead.
