If you spend any time on TikTok, you’ve probably seen the viral “Classic Carol” chicken salad recreations inspired by Chicken Salad Chick. We actually do have one in town, but I’ve yet to make it there and eat any of their many versions myself, so this isn’t meant to be a perfect copycat. It's just my take on that clean, creamy, simple chicken salad everyone seems to love.
I’m calling it Classic Carol‑Style Chicken Salad (TikTok - My Way), because it’s inspired by the social media chatter, shaped by the ingredients folks swear by, and finished the way I like it: tender shredded chicken, crisp celery, real mayo, and just enough seasoning to make everything hum. It’s different from my usual “classic” chicken salad that leans Southern deli‑style with boiled eggs and pickle relish and the one that I make the most, but every bit as comforting and versatile.

Add fruit, pickles, olives, or grape tomatoes on the side and you’ve got a plate that works for lunch, brunch, or a quick snack.

- 3 cups shredded chicken breast meat
- 1 rib celery, minced
- 1 cup real mayonnaise
- 1/2 teaspoon each onion and garlic powder
- 1/4 teaspoon kosher salt or to taste
- 1/4 teaspoon freshly cracked black pepper, or to taste
Here's how to make it!
Add the shredded chicken to the bottom of a lidded storage bowl and top with the remaining ingredients.
Give it a mix, adding additional mayo as needed. Taste and adjust seasonings as desired.
Cover and refrigerate several hours or overnight to allow flavors to mingle.
To serve, spoon over an English muffin or a split croissant, top with cheese and pass under the broiler, or put a scoop over shredded lettuce and sliced fresh tomatoes with crackers or spread on soft bread for a sandwich. Add some fresh fruit, sliced grape tomatoes, pickles and/or olives on the side. I just love these French croissants from Authentic Gourmet from QVC for sandwiches.
