
A cozy, clean-out-the-fridge bake that layers your holiday leftovers into one comforting casserole finished with gravy and a crunchy topping. Serve with cranberry sauce on the side for the perfect follow-up feast.
Holiday Leftovers Casserole
I love sandwiches from my leftover turkey or ham and that's usually the first thing out of the gate.
That's very closely followed by a soup or gumbo made from the turkey bones or any number of things made from a ham bone and leftover ham, but honestly?
While there are many ways to repurpose holiday leftovers (tap that link to find my favorites), one of my favorite all-in-one ways is to turn what's left into a casserole!
It's not usually very pretty, but then really what casseroles are?
What counts is the flavor and with that, I'm never disappointed.
Here's what you'll need to make my Holiday Leftovers Casserole:
- 2 cups leftover cooked dressing or mashed potatoes
- 2 cups leftover shredded or chopped cooked meat (turkey, ham, pork or beef)
- 1 (10.5 ounce) can condensed soup (mushroom, chicken)
- 2 cups leftover cooked carrots, corn, green beans, mixed vegetables or vegetable casseroles
- 1 cup leftover gravy
- 1 cup toppings: Fried onions, buttered crushed crackers, potato chips or breadcrumbs, cheese
- Leftover cranberry sauce, on the side

Here's how to make it!
Preheat the oven to 350 degrees F. Butter or spray a casserole dish with non-stick spray - whatever size you want to make according to the number of leftovers. I'm using an 8-inch square dish.
You'll start with a layer of leftover dressing or mashed potatoes and leftover shredded or chopped meat.
Add a layer of dressing or mashed potatoes in the bottom of your casserole dish.
For an 8 or 9-inch square dish, add about 2 cups of the leftover meat - whatever protein you have.
You'll mix the meat with a can of condensed soup - typically that's cream of mushroom soup, chicken or other cream soup - and yes. You can absolutely make your own homemade version here.
Today, I'm using a can of condensed chicken gumbo soup that I had in the pantry and needed to use up. I use this to make those delicious Gumbo Sloppy Joes, so I thought, we are mixing and matching things up here right? Why not?
Whatever you use, you'll need one can for every 2 cups of shredded meats.
Spread that out.
Top with whatever leftover veggies you have. Anything goes here!
I'm using leftover green bean casserole but single or mixed vegetables like carrots, corns and green beans or vegetable casseroles are fine too.

Top with leftover gravy. You can also warm the gravy separately and spoon over each individual serving if you'd rather and if you don't have leftover gravy, I've included a simple stovetop gravy you can quickly make.

Add the topping. I'm using crispy fried onions, but crushed Ritz or other crackers mixed with some butter or even potato chips are good too.
It's not necessarily pretty, but it sure is delicious! Serve with leftover cranberry sauce on the side.
