Everything Cracker Pickle Bites

Everything Cracker Pickle Bites


This time of year between fake fall and actual cooler weather is an odd time for a food blogger from the south.

Some bloggers jump right into fall foods even when soups and stews and nice hearty casseroles just don't quite fit yet for us. I'm telling y'all, it's hard for me to focus on fall and winter recipes when the heat is still on outside!

But... there's football in the fall, so that's where I tend to keep my focus, on snackable foods for game day viewing and recipes that fit no matter the season, at least until the weather actually cools off down here.

I think I first saw this in a social media reel, but I popped over to the Cheez-it website to see what they had about it. Sure enough there are lots of recipes using cheese crackers there!

This is a great little party food bite, especially for those folks, like me, who love pickles! And it's easy enough to get the kids involved in building them too. 

Here's what you'll need to make these Everything Cracker Pickle Bites:
  • 1 (11.7 ounce) box, large cheese crackers, about 30 to 40 count (like Extra Big Cheez-It)
  • About 40 1/4-inch slices pickles (spicy or bread and butter recommended)
  • 1 block pepper jack cheese, sliced as needed to fit crackers
  • Everything bagel seasoning, to taste

Obviously, you can decrease or increase this as needed. I'm using my countertop oven (#ad), so I only made a dozen since I'm the only pickle eater in this house.

Here's how to make them!

Preheat oven to 400 degrees F and line a rimmed baking sheet with a baking mat (#ad), aluminum foil or parchment paper.

You'll need some snack crackers (#ad) and you can use any kind, although you'll want some that are not too tender and fairly sturdy. I used the extra big Cheez-it brand cheese crackers for this snack. I think the Snap'd, Grooves or Extra Toasty versions would work well too, though there are a bunch of different crackers on the market that will also work for this snack, including those fancier party crackers (#ad).

Set these out across the baking sheet.


For pickles, I'm using bread and butter style (#ad), though if you prefer them, dill pickles would work just fine too as well as other pickled products. Sliced pickled okra comes to mind! These are from Rachel's Texas Kitchen, a Mennonite gal from Texas who sells a lot of home canned products online. I found her on social media and I've enjoyed a lot of her products since, but my favorites are the baby beets and peaches, though the pickled squash is really good too as are her jams and jellies.


You'll want to make sure that the pickles are well-drained and patted dry.


Place a pickle on top of each cracker. I know it looks like there is something (like yellow cheese) under the pickle other than the cracker but it's just a reflection from the foil! 


My store was out of the blocks of pepper jack cheese, but I did find this which is a processed cheese like American, except with the peppers like pepper jack. I was able to quarter the individual slices to fit the big cheese crackers so it actually worked quite well! You can use any cheese you prefer though.


Top each pickle with a piece of the cheese.


You can pretty much find a version of this kind of "everything bagel seasoning" (#ad) everywhere these days and although its original intention was to use on bagels, it's really good for a lot of things - snack mix, sandwiches, vegetables, steaks and as a topper on casseroles. I'm using Trader Joe's brand, but they all are generally a blend of salt, garlic, onion and poppy and sesame seeds, the main difference being in the proportions of each ingredient.


Sprinkle the tops of the cheese with the seasoning.


Bake for about 5 minutes, or until cheese melts. Serve immediately.
