Sour Cream Coffee Cake

A delicious coffee cake known as Sock it To Me Cake, has the usual attendees of brown sugar, pecans and cinnamon, but, unlike most coffee cakes, it actually gets better as it sits - not that it'll be around that long.

When my Mama used a boxed cake mix, Duncan Hines Butter Recipe was the one she used. In my opinion, it is the best boxed cake mix on the market and worth the extra money over generic, though with coupons and sales you can often get a great price on them and stock up.

In fact this boxed cake, combined with her pineapple filling, was often the base of the cakes she decorated for people and they loved those cakes! Mama started her cake decorating with birthday cakes here and there, then did a multi-tiered cake for my big 18th birthday bash, and eventually my wedding cake ... followed by several wedding cakes for other people in the years following. She became quite good at cake decorating, and though I've done a cake or two here and there, cakes are not my forte, and it's a talent I most definitely did not pick up.

Well thank goodness this cake doesn't require any special talents! In fact, when I had the chance to review the cookbook Best of the Best from the Deep South and saw this recipe, I knew that it would be the recipe I would make for my review, especially since I'd recently had requests for a bundt style coffee cake. Perfect! This is a slightly adapted version of the cookbook's cake, which is an adaptation of the original Duncan Hines Sock it to Me Cake, a delicious coffee cake with the usual attendees of brown sugar, pecans and cinnamon, but, unlike most coffee cakes, it actually gets better as it sits - not that it'll be around that long.

Be sure to start checking your cake at about the 45 minute mark. I got distracted and didn't and nearly burned mine!

Recipe: Sour Cream Coffee Cake

Prep time: 10 min |Cook time: 55 min | Yield: About 12 servings

  • 1 (18.25 ounce) Duncan Hines Moist Deluxe Butter Recipe Golden Cake Mix
  • 1/4 cup of granulated sugar
  • 3/4 cup of cooking oil (like vegetable or canola)
  • 4 large eggs
  • 1 cup of sour cream
  • 4 tablespoons of brown sugar
  • 2 teaspoons of cinnamon
  • 1 cup chopped pecans

Preheat oven to 325 degrees. Spray a bundt or tube pan with Baker's Joy baking spray; set aside.

In a small bowl, mix together the brown sugar, cinnamon and pecans. Remove a tablespoon of the cake mix and add to pecan mixture. Mix together the remaining cake mix, sugar, oil, eggs and sour cream, until well blended; set aside.

Sprinkle 1/3 of the pecan mixture into the bundt pan, top with 1/2 of the cake batter. Sprinkle 1/3 of the pecan mixture over that, and top with remaining cake batter. Sprinkle the remaining pecan mixture on top. Bake at 325 degrees for 45 to 55 minutes, or until a toothpick inserted into the cake comes out clean. As always, ovens vary so be sure to start checking your cake early!

Cool in the pan on a cooling rack, then turn out on a pretty cake stand or cake holder.

Cook's Note: Disregard the instructions on the cake mix package and follow the recipe.

    Kathy, the recipe called for a bundt pan so that is what I used. I can't imagine why it would not work in another type of pan, though I can't attest to it!

  9. I make a sour cream coffee cake in my bundt pan as well. Mine is completely from scratch, but honestly, I have no qualms about beginning with a cake mix. I just don't have a recipe for one that does. Next time, I'll try this.

    And yeah, I said "discard the bacon fat." and I totally thought of you as I was typing it. : ) I wanted to link to your post about bacon fat, but by the time I was ready to add the links last night I was too sleepy. I was thinkin' of ya, though! Southern cook sacrilege, I know...throwing away bacon fat.

  13. Mary I have a recipe like this one but it does not use a mix, hmm I think a mix is easier. And I have GOT to get me a bundt pan one of these days. I have to get work clothes first though. So boring, I would rather have kitchen tools than clothes!

    1. I would love to have the Recipe that is not a Mix, the mix is now 15 oz not the 18 so you have to buy two boxes.

    2. I know... that is aggravating! With the mixes you don't need 2 boxes - that would be too much! You just get smaller cakes now with box mixes. The way of the world.

    1. My sweetie's favorite too, also my son's. They love it, but hate buying two (actually 3) boxes of cake mix to get the correct amounts! I always make two of these cakes one for sweetie and son. I could make them twice a month and it would not be enough. Son said it's his favorite breakfast!

    Hi Rachel, you are right ... this recipe is similar to the Sock it to Me Cake by Duncan Hines. The author in the 'Best of the Best from the Deep South' cookbook did not specify a brand of cake mix - that was me. They also used less cinnamon, that was also me. I like more cinnamon. :) This recipe uses more oil and no water - the DH cake uses less oil and adds water, and this recipe uses the pecan praline streusel filling on the top, middle and bottom of the cake so it adds a few different textural layers to the cake making it a lot different. The DH cake only puts the streusel filling in the middle. This cake doesn't use a glaze, but Sock it to Me does.

    So while it is a similar cake - it's really quite different! Maybe you'll try this one this weekend! Enjoy.

  17. I'm obviously not spending enough time looking over recipes at your site, Mary, or I would have made this coffee cake a long time ago. I love to have something with my morning cup of coffee, and this is right on time. I have company coming for my oldest son's wedding in a couple of months, so I think I'll make this for them as well. I know my sisters will love it.

    I like to know if Mama`s pineapple filling(once maid) does it go right into the raw cake batter?

    1. Hi Gina! Just to be clear so nobody is confused the pineapple filling I reference in the post doesn't have anything to do with this post or cake recipe.

      It doesn't go into the batter at all - it's just a filling that is used in between the layers on a layer cake. Mama used the Duncan Hines butter recipe cake mix - the same one that was used here - to make layered birthday cakes and often used the pineapple filling with those. Sorry if that was confusing. The pineapple cake is not used for this sour cream coffee cake.

  20. I made this vegan by substituting the eggs and sour cream with vegan products. The result was DELICIOUS!!! It was moist and perfect!
