This chicken and dressing casserole is an old school well loved dish in the South. It goes by many names - Poulet de France, Poulet de Normandy, Poulet Chicken or simply Poulet - made with cooked chicken, stuffing mix, milk sauce, topped with cream soup, and finished with cheese.

I have mentioned here before that once upon a time I did the Once a Month Cooking (OAMC) system {affil link} where you spend one weekend essentially cooking meals to freeze for the month. I did it with a small upright refrigerator freezer too and I loved it. The internet was a different place back then and nothing like it is now, so everything occurred on bulletin boards and forums.

Anybody else remember when AOL, Prodigy and CompuServe were the top three ways to the internet and you could only access them with a dial up connection, meaning that you had to tie up your home phone line? There was no such thing as a smartphone in those days.

Boy oh boy am I datin' muhself there.

Those of y'all who've been around here awhile know that I love my homemade, from scratch two-crust, chicken pot pie.

It's classic, the way a pot pie should be, and it quickly became both a fan and family favorite. This batter topped recipe is just a tad bit quicker version for when time is running short.

The concept of slow cooker dressing certainly isn't unique to me - you'll find a multitude of recipes online and at other blogs and websites, all slightly different from one another.

This method actually dates back to the late 70s in my recipe box, a time when convenience products and crockpots were all the rage with us working women. I used to rely on my crockpot a lot back then, but then fell away from it for years because I got bored with the way they cooked.

Then I started blogging, finally upgraded my slow cooker, educated myself a little bit better on slow cookery and slowly started to build up my collection of recipes again.

Homemade King Ranch Casserole

A Tex-Mex favorite, this homemade from scratch version of King Ranch Casserole is made using a highly seasoned shredded chicken, and a butter roux-based cream sauce, seasoned with a medley of veggies and peppers, and layered in with cheese and corn tortillas. Yum y'all!

King Ranch Casserole


King Ranch Casserole is more Tex Mex than it is Deep South, but since I have roots in that region too, I'll claim it over here as a Mississippi favorite as well!

It's a simple layered casserole, typically made using seasoned, shredded chicken, fresh veggies, and layered with a sauce, in between corn tortillas and shredded cheese. Really, what is not to love about that?!

A classic potluck dish, this casserole uses the same basic elements as chicken salad, but it is baked and just delicious! I like to include the chopped boiled eggs, but those can be omitted if you prefer. Always a favorite!

Called Hot Chicken Salad because it contains many of the typical elements of a cold chicken salad, but it's baked in a casserole form.

Probably one of the Original Church Lady Casserole Recipes from way back, and published in most every southern community and church cookbook, it still finds its way not only at church socials, but reunions, potlucks, as a funeral dish, or at any number of other gatherings.

I finally got my recipe for broccoli and rice casserole up after a recent reader request, though it's pretty common with most other broccoli and rice recipes out in the world - cooked rice, cooked broccoli, cream of something soup and a few seasonings, all mixed together, turned out into a baking dish, sprinkled with cheese or a crumb topping and baked.

Now in all fairness, I know that this recipe is representative of what most folks think of when they think of chicken spaghetti. I really don't consider this to be a true "chicken spaghetti," since my Grandma - Grandma Mac of the pound cake fame - made a killer chicken spaghetti that was my all time favorite dish. Her chicken spaghetti was made with a whole hen and a red sauce similar to a beef based spaghetti, it was not baked, and it contained no cheese whatsoever.

While the name may be the same, this version is of course, a casserole, and not technically exactly like good ole old fashioned chicken and dumplings. To me, however, it provides a consistency and flavor similar to the more labor-intensive homemade version, but in a super-easy form, especially if you are using leftover chicken or a rotisserie chicken from the grocery store.

If you are cooking fresh chicken, especially if you are using boneless, skinless chicken you want to just slightly under cook it when you poach it, since it will essentially continue cooking in the oven.
