Sheet Pan Green Beans with Italian Sausage
This was another one of those recipes that passed through my timeline on social media video shorts.
For someone who isn't particularly active on social, that seems to happen a lot because those little Facebook reels that are featured in our timelines seem to draw me in. I don't do videos and doubtful I will although my eldest grandson, soon off to college already (how does that happen so fast??) tells me I need to.
I told him that since most of the videos I see appear to require me to be cute, in full hair and makeup, bejeweled and with highly decorated and maintained fingernails, well... don't hold your breath! 😂
Nonetheless, I sure do seem to get alot of inspiration from those short videos here lately!
Truthfully, sometimes those videos are just new eyes on old recipes that have been around forever and younger folks are just discovering and coming up with clever names to make them go viral.
Other times, they end up being a disappointment.
Occasionally however, they're a success and this is one of those times. I really enjoyed this!

Simple ingredients with big flavor - my favorite kind of magic.

Here's what you'll need to make these Sheet Pan Green Beans with Italian Sausage:
For the Sauce: (Cheater Alfredo)
- 1 (10.5 ounce) original condensed cream of mushroom soup
- 1/2 cup shredded Italian-style cheese blend
- 1/2 cup whole milk
- 2-pounds fresh green beans, trimmed
- 1-pound Italian sausage
- 1-1/2 cups shredded Italian-style cheese, divided
- 1/2 tablespoon extra-virgin olive oil
- 2 teaspoons garlic salt
- 1 teaspoon onion powder
- 1/4 teaspoon freshly cracked black pepper
- 1/2 teaspoon Creole or Cajun seasoning, or to taste, optional
- 2 teaspoons Italian seasoning

Here's how to make it!
Preheat oven to 375 degrees F. In the reel, Brooke used a jar of commercial alfredo sauce (#ad), but that's not a product I typically keep on hand. Instead, I made this quick cheater sauce from condensed cream of mushroom soup, something that I pretty much always have in the pantry, along with a preshredded Italian cheese blend I also keep on hand and whole milk. The Italian style cheese blend I used contains mozzarella, provolone, parmesan, romano, fontina and asiago cheeses so it's a great blend for this recipe.
Absolutely make your own homemade alfredo though if you prefer!
Whisk until well blended and set aside. Y'all, I absolutely love this whisk (#ad)! I have a lot of different whisks, but I keep reaching for this one because it's a semi-automatic push whisk, where you push down on the handle and the whisk does it thing! Little easier on these older hands. If ya know, ya know...
Remove sausage from the casing and cook in a skillet, gently breaking up the meat into large chunks until no longer pink; drain and set aside. There's another one of my favorite kitchen tools (#ad)! A meat masher is just so much easier than trying to break up meats with a spoon.
Don't over mash the sausage though because you want some nice sized chunks.
Cook until you start getting a little bit of caramelization. Remove from pan, drain and set aside.
While that's cooking, trim the beans by snapping off the ends. Fresh beans are available year-round these days and since we're using them here, as I've mentioned before, with all of the produce recalls these days, I highly recommend using a veggie wash. This is the one (#ad) I'm currently using, but there are quite a few different ones on the market today.
Then, rinse well and set aside to drain. I'm using my Easy Greasy colander (#ad), another oft used tool in my kitchen! These are all things that make my life easier when cooking.
For seasonings, I'm using garlic salt - I like the Lawry's coarse salt with parsley (#ad) included - plus freshly cracked black pepper, onion powder, Cajun seasoning and Italian seasoning.
I prefer to add each ingredient to a bowl.
And mix it up. It just makes it easier to cover everything evenly, without using too much of any ingredient.
Lay beans on a sheet pan or rimmed baking sheet. Now, understand this sheet pan dinner results in a crisp-tender green bean, so if you prefer a much softer bean, you'll want to give them a head start before baking. I've included those instructions in the printable.
Drizzle the beans with olive oil.
Toss to coat.
Sprinkle evenly with the seasoning mix and toss again.
Sprinkle with 1/2 of the shredded cheese.
Scatter the cooked and drained sausage all over the top.
You'll need an alfredo sauce, and that can be homemade, from a jar, or use the "cheater alfredo" I've included in the printable. Spoon dollops of the sauce all over top of the sausage.
Sprinkle with remaining cheese. Bake uncovered for about 25 to 30 minutes, or until beans are tender and cheese has melted.
