I didn't grow up with a lot of cornbread in my life here in the Deep South. We seem to have been more sliced white bread, yeast roll and French bread kind of people.

Over the years of blogging food recipes to the world, I've learned that folks in the Southern U.S. can get very territorial about their cornbread, and boy will they let you know what they think!

But, having the advantage of writing recipes over these years, I've been able to play around with many different variations of cornbread.

Cast iron skillet Southern cornbread made with buttermilk and stone-ground cornmeal.



Hand-formed pones of dense and sturdy fried cornmeal patties, a perfect companion for a bowl of greens and pot likker.



A tender cornbread made using self-rising cornmeal and flour with butter and buttermilk, based on Cooking with Cajun's famed cornbread.

Easy to make, this tender and moist Mexican Cornbread brings a sweet heat to those Tex-Mex and Mexican meals, soups, stews and chili dishes. 



Hot water cornbread is a fried cornbread, tender on the inside, thanks to a precook of the cornmeal with boiling water, and crispy on the outside from a quick fry in a blazing hot cast iron skillet.



Buttermilk cornbread made with cheese, jalapenos, corn kernels and honey and finished with a honey butter glaze.

A classic southern recipe, cornmeal hoecakes are little pan fried cornmeal medallions that are at home as breakfast, as much as they are as a side dish with a mess o' greens, and just about anything else!



Corn spoon bread goes by a number of names, but it's basically a souffle made of cornmeal, corn, sour cream, milk, eggs and butter. A wonderful side dish for any holiday.



Skillet cornbread is a southern staple. Baked in a preheated, sizzling hot oiled cast iron skillet, it produces a beautiful crunchy crust on the bottom.



I believe that hushpuppies were actually born out of somebody adding a little milk or buttermilk to leftover fish fry coating and dropping it into the hot oil. These days we make them a little bit more intentionally.
