Fiesta Taco Dip

If you spend any time on social media you may have seen a dip going around recently called "boat dip." There are now such a wide range of variations of that dip out there that it's hard to say what the original recipe ingredients and ratios were, or even who the originator was.

The only thing that seems in agreement is that it was called boat dip because it was a dip that was routinely made to carry on boat trips for that family.

I actually tried quite a few of those variations myself and this one is the one that I settled on.

I think the success of this recipe really relies on using quality products that you would normally use for any other dishes you are preparing, kind of like that whole cooking with wine thing.

Never cook with a wine that you wouldn't drink.

Never make a dip with cheaper versions of products you wouldn't normally buy.

The sour cream, taco seasoning, salsa and mayonnaise used here are all critical flavor components, so use good quality products you already love.

One thing is for certain. You need to make this!

It really is a delicious dip for your party or game day snack and it's a cold dip too, so you don't have to worry with trying to keep it warm. It's become a personal favorite of mine and I've already made this final version multiple times!

Here's how to make my Fiesta Taco Dip based on that viral TikTok sensation called Boat Dip.

Blend together the sour cream, salsa, mayonnaise, salt, pepper and taco seasoning in a lidded storage container.

Add the corn and cheese and mix in. I'm using a Mexican style corn, which contains peppers, but I've used regular corn, both frozen and thawed and well drained canned regular corn kernels. All are good!

I'm also using a mixed, Mexican style shredded cheese here. The one I'm using contains monterey jack, cheddar, queso quesadilla and asadero cheeses. I just happen to like the blend, though you can stick with a single favorite of your own.

Blend that in, cover tightly and refrigerate for 1 hour or longer before serving.

Dig in!
