Sweet and Spicy Rotel Sauce

This sweet and spicy sauce made from Rotel tomatoes, and seasoned with brown sugar, mustard and Cajun seasoning, is a perfect all purpose sauce for meat, poultry, pork or fish.

Sweet and Spicy Rotel Sauce

This is a wonderful, all purpose tomato sauce, perfect for spooning over meatloaf, or just about any meat, poultry, pork or fish. Made with brown sugar, chunky RO*TEL tomatoes, spicy horseradish mustard and my favorite Cajun seasoning, it's a great balance between spicy and sweet and a perfect accent. We love it, and I think it will become a favorite sauce for you too.

Recipe: Sweet and Spicy Rotel Sauce

Yield: About 1-1/2 cups


Ingredients
  • 1 can of Rotel chunky style diced tomatoes
  • 1/2 cup of ketchup
  • 1 teaspoon spicy mustard (like Emeril's)
  • 2 tablespoons of light brown sugar, packed
  • 1/2 teaspoon of Cajun seasoning (like Slap Ya Mama) optional
Instructions

In a small saucepan, combine the tomatoes, ketchup, mustard, brown sugar, and Cajun seasoning. Bring to a boil, reduce heat and let simmer until heated through and thickened. Spoon hot sauce over slices of meatloaf or other meat, poultry, pork or fish.

*Emeril's Spicy Mustard contains: Vinegar, Water, Mustard Seed, Salt, Horseradish Powder and Red Pepper
