Old-Fashioned Tomato and Saltine Cracker Salad

Old-Fashioned Tomato and Saltine Cracker Salad

Okay, okay... I know that if you've never heard of this before, you're thinking that just doesn't sound right! I get it.

Crackers? Mixed with tomatoes and mayonnaise? It does sound a little odd, and I know, you're thinking mushy, soggy, wet crackers right? Truth is, it's a salad that has been around, at least in the south, for a long time, and, it's actually very, very good.

The crackers come in at the end, just before serving, so that there is still crunch and texture to them against the soft tomatoes and wet dressing. Honestly, just think along the lines of a tomato sandwich. That's what this flavor profile will remind you of!

You can make this as simple as garden fresh tomatoes, mayo, salt and plenty of pepper, and crumbled saltines, but I like a little Vidalia onion with mine too - sometimes green onion, sometimes both. I also like to bump up the seasonings a tad beyond salt and pepper, adding some Cajun seasoning and a little garlic powder. Delicious!

Here's how I make my Old Fashioned Tomato and Saltine Cracker Salad!

You must start with good tomatoes, preferably homegrown! Cut them into good sized chunks. The focus here is the tomatoes. I enjoy sweet summer Vidalia onions in mine, though they can be left out, if you'd rather. Chop those up and toss with the tomatoes. Combine mayonnaise and seasonings and add to tomatoes; gently toss, taste and adjust for seasonings. Cover and refrigerate for 1 hour to chill.


Just before serving, add enough of the crumbled saltine crackers for desired texture and toss. While you can use any cracker you like, saltines are more sturdy and hold up better than a softer, butter cracker. Transfer to serving bowl and serve immediately. Serves about 4.
