Recipes Using Leftover Hard-Boiled Eggs

When you find yourself with some leftover hard-boiled eggs, here are a few ways to incorporate them into future meals.

Leftover boiled eggs aren't something we hear too much about anymore, especially in my family, because, well we eat them up! I know there are more folks who don't even boil real eggs for Easter anymore than there are who do, but for those of us who do still boil eggs, I've pulled together a round-up showing a few ways to use up those leftover boiled eggs!



First out of the gate, of course - Deviled Eggs!


Some of you call this egg salad, but my egg salad is a little bit different, so I just call this a chopped egg sandwich because of its simplicity. You'll find instructions for this variation at the bottom of my egg salad recipe, in the cook's notes.


And of course, on that same post you'll find my egg salad and what sets the two apart, for me at least. I often eat it with some tomatoes on the side and just crackers, but it's great as a sandwich or even stuffed in a juicy summer tomato.


And then there are the variety of protein enhanced egg recipes that I love. First out of the gate, my classic tuna salad.


Then, one of my number one, top favorites - shrimp salad.


Next, my classic deli style chicken salad. If you made a turkey breast, here's a great way to repurpose some of that too.


And, of course, so many of us bake a holiday ham, and ham salad, is a very popular way to use both those eggs and some of that leftover ham too!


Boiled eggs go hand-in-hand with many potato salads.


I also like to add some to my English Pea Salad.


And, in my favorite Old Fashioned Tuna Macaroni Salad. Just thinking about this one usually throws a craving on me for days!


I put them in my Hot Chicken Salad Casserole.


Many of us include some to add body to our gravies.


Sometimes we add a little to our cornbread and bread dressings.


And to our salad dressings!


A slice of boiled egg is traditional on top of Old Sober Soup.


And topped over Creamed Spinach.


And added into the layers of 7 Layer Salad.
