Stuff to Make with Ham Bones and Leftover Ham

Recipes Using Ham Bones and Leftover Ham

Looking for some ways to use up that leftover holiday ham or ham bone? I've gathered some of my favorite recipes here in one spot for you. Don't fret if you're not one to cook a whole bone-in ham, because these days you can get a mighty fine, plump ham bone at your local ham store, like Honey-Baked Hams, where they generally charge by the pound. They're beautiful bones and well worth the investment.

Ham Bone Dumplings

Belly warming and hearty, a slow stewed ham bone stock is finished with drop dumplings.

Red Beans and Rice

Homemade red kidney beans made with dried beans, and slow stewed with the Trinity, bacon, smoked sausage and a good ham bone or ham hock, served over hot rice. Served here with a pan seared pork chop and Southern green beans. Heavenly.

Deviled Ham Salad

Old School Deviled Ham Salad, made with ground ham, sweet pickles, pimentos and mayonnaise. My version adds in celery and onion, and a little horseradish, spicy mustard, hot sauce and Cajun seasoning with the mayonnaise.

Lady Cream Peas

Lady cream peas, seasoned with smoked tasso or ham, onion, garlic and fresh herbs, served with a side of cornbread and pictured here, with broiled chicken.

Senate Bean Soup

My version of the famous ham and bean soup, made with a ham bone stock and a mixture of veggies and Navy pea beans, based on the one served at the U.S. Senate Restaurant every day.

Croque Madame or Monsieur

A hot ham and cheese sandwich, covered with a creamy B├ęchamel sauce, and finished with a fried egg. Simply omit the egg for a Monsieur.

Green Gumbo

A traditional gumbo made of multiple greens such as collards, turnip greens, cabbage, kale and spinach, and a wide variety of meats, often a ham hock, smoked sausage or smoked ham, cooked bacon, Italian sausage and Mexican chorizo.

Somewhere between a soup and stew, all thick and creamy and soothing, this full bodied and flavorful pot of white beans is all due to the ham bone.

Ham and Potato au Gratin Casserole

A delicious potato casserole, using both leftover vegetables and ham, baked in a creamy cheese sauce.

Black-eyed Pea Jambalaya

Our Deep South version of the low country favorite, Hoppin' John, this Black-eyed Pea Jambalaya contains bacon, ham, spicy smoked sausage, black-eyed peas and rice.

Cajun White Beans

White beans, seasoned with the Trinity, garlic, green onion, parsley, bacon and andouille sausage or ham, or use a combination of both. Serve over white rice.

Ham and Egg Salad

Made with ham and boiled eggs, green onion, celery, mayo and mustard. It's a definite Southern favorite. Add your favorite pasta and a few add-ins like shredded or cubed hard cheeses, thawed, frozen peas, sliced olives, chopped carrot, cucumber, green, red or yellow pepper, pickles, jalapeno and/or halved cherry or grape tomatoes, and you have a fantastic pasta salad!

Breakfast Quesadilla

A nice change from the usual, sandwich those scrambled eggs between flour tortillas along with some cheese and ham or bacon, and you have a great breakfast quesadilla.

Ham and Cabbage Soup

A simple soup made from a chicken broth base, with leftover ham, bacon, a ham hock and cabbage.

Mini Italian Sandwiches

Perfect minis for a party, these sandwiches are layered with provolone cheese, ham, salami and your choice of Italian cold cuts. Finish with a creamy Italian dressing, lettuce, tomatoes and olives.

Southern Butter Beans (Large Limas)

Large lima beans, or butter beans as we refer to them in my part of the Deep South, are stewed down to a creamy texture, and with this mix of seasonings, are just pure comfort food.

Ham Pasta Salad

A classic macaroni pasta salad of smoked ham, shredded or cubed cheese, celery, onion, and a Ranch dressing. Macaroni is most often used, but I love it with bowtie pasta! Make it your own!

Black-eyed Peas, Crowders, Purple Hull, Field Peas

Southern peas cooked down with the holy Trinity of cooking, bacon, jalapeno, a ham bone or ham hock, and a few seasonings. Black-eyed peas are pictured here.

Stewed Baby Lima Beans

Baby lima beans, stewed down to creamy perfection and seasoned nicely with bacon and ham, are as at home as a side dish as they are a main dish, when paired up with a nice garden salad, cornbread and sweet tea.

Split Pea and Ham Soup

A classic soup combining dried split peas and ham, with a mirepox of onion, carrots and celery, enhanced with a ham bone or ham hocks.

A tender biscuit stuffed with smoked honey ham and shredded cheese. These are great breakfast or brunch biscuits served alongside some fluffy eggs or even as a base for an egg sandwich. I like to use a sweeter honey ham for these, but any good smoked ham works fine too.

A country skillet breakfast meal, often called Farmer's Breakfast, made with fried potatoes, onions and peppers, eggs, sausage, ham or bacon, and cheese - great for a "breakfast for dinner" meal and also makes a great breakfast burrito filling.
