Ham and Cheese Puff Pastry Pinwheels


There’s just something about puff pastry appetizers that feels a little special, even when they’re simple as can be. There are so many ways to use them for little bites and they make things look a little fancy!

Around the holidays those puff pastry sheets are about near impossible to find around here. Once I had to run all over town to 4 stores before I found the very last package! So... make sure that you stock up in your freezer for those party appetizers!!

These Ham and Cheese Puff Pastry Pinwheels are the kind of warm, savory bite folks hover around - flaky layers, smoky ham, crispy bacon, melty cheese, and that sweet‑tangy mustard sauce tucked inside.

Here's what you'll need to make my Ham and Cheese Puff Pastry Pinwheels:


For the Mustard Sauce:
  • 1/4 cup yellow mustard
  • 1/2 tablespoon apple cider vinegar
  • 1-1/2 tablespoons local honey
  • 1/2 tablespoon ketchup
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon hot sauce
  • 1/4 teaspoon freshly cracked black pepper
For the Pinwheels:
  • 6 slices bacon
  • 1 (17.3 ounce) package frozen puff pastry (2 sheets), thawed
  • 8 slices smoked deli ham
  • 1 cup shredded cheese
  • 1 large egg, beaten with 1 tablespoon water

Here's how to make them!

Quick note. Since I was making these just for the two of us, step by step pics are for a half recipe.

Preheat the oven to 375 degrees F. Line 2 baking sheets with silpats or parchment paper and set aside. In a small bowl, mix together the mustard sauce ingredients.

Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside. I pulled some already cooked bacon slices out of my freezer.


Sprinkle a little bench flour on a clean countertop or check out these handy dandy silicone baker's mats (#affil) I found. All those measurements and diagrams are sure helpful for someone like me who doesn't bake much and since they're silicone, they roll right up to store in a kitchen drawer!


Unfold the first pastry sheet on that floured surface and lightly roll into a 10-inch square.


Spread the mustard sauce over the entire surface of the pastry, leaving a slight border around the edges. I was thinking that if you live anywhere near Fairhope, Alabama, Shube sauce would also be excellent for these too!


Add a layer of ham on top of the mustard sauce. Depending on the type of ham you have and size of the cuts you may need more or less than the 4 slices per sheet. These slices were pretty big!


Sprinkle chopped bacon on top.


Add the cheese. I guess I forgot to photograph that step, but it's there y'all. Promise! See?


Tightly roll the pastry sheet into a log, jelly roll style.


Then pinch the seam closed and place seam-side down on a cutting board or work surface. You don't want to cut your silicone mat!


Using a sharp knife, cut the log crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer the pinwheels to the prepared baking sheet, spiral-side up and repeat the process with the second puff pastry sheet.


In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash. Bake the pinwheels until puffed and golden, 25 to 30 minutes. 


These are SO seriously good y'all, you might want to double the batch, just sayin'...
