These Baked Smothered Chicken Thighs are a cozy, family‑friendly dinner inspired by the viral TikTok version but rebuilt with real‑life cooking in mind. Tender chicken, hearty vegetables, and a silky gravy come together in one baking dish for a simple, comforting meal you’ll want to make again and again, anytime of the year.

Every so often a recipe goes viral online, and while the idea is delicious, the method doesn’t always translate well to real‑life home cooking for me.

That was the case with the popular TikTok version of these smothered chicken thighs. The concept is wonderful - tender chicken, rustic vegetables, and a rich gravy - but some of the steps and seasoning amounts felt a little heavy for everyday kitchens.

So, I took the inspiration and reshaped it into a simpler, safer, and more balanced baked version that still delivers all the comfort you’re looking for.

After making it myself (with a little Cajun twist!), it turned out so good that it’s officially joining my regular rotation. This is the version that works beautifully in a real kitchen, any night of the week.

Here's what you'll need to make my version of the viral Baked Smothered Chicken Thighs:


For the Seasoning Blend:

  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 to 1 teaspoon Creole or Cajun seasoning, or to taste
For the Chicken:

  • 6–8 boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, thick‑sliced
  • 4 - 5 large carrots, peeled and cut into uniform 1½‑inch chunks
  • 1-1/2 cups chicken broth
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Mashed potatoes or cooked noodles or rice

If you've been following me any length of time, you already know I've been primarily sourcing meats outside of the grocery store. Rastelli's is one butcher where I have been sourcing chicken. Today we're using their trimmed boneless, skinless chicken thighs.

As to the seasonings, I prefer to combine them in a small bowl to mix together rather than to apply them individually. This distributes the seasonings a little more evenly. Instead of reserving the Italian seasoning for the top, I'm including it here.


Put the chicken in the pan and drizzle with the oil, turning to coat on both sides and placing top, presentation side down.

Turn chicken top side up.


And apply remaining seasoning.


Scatter the carrots around the chicken.

Add the chicken broth.

Cover tightly with foil.


Prepare the slurry by mixing the cornstarch and water.

Cornstarch and water whisked together in a small cup.

Remove pan from oven and increase oven heat to 375 degrees F. Use oven mitts to very carefully transfer the juices from the chicken into a bowl.


Whisk drippings into the slurry and pour in the baking pan.


Return to the oven uncovered and continue cooking for about 15 minutes or until gravy is thickened and bubbly.

  • Boneless skinless thighs stay juicy and tender even with longer cooking times.
  • Uniform carrot size ensures everything cooks evenly.
  • Italian seasoning blends beautifully into the seasoning mix.
  • Creole or Cajun seasoning adds warmth without overwhelming the dish.
  • Chicken broth can be salted or unsalted, just adjust seasoning to taste.

Creamy Cajun Version: Stir 1/4 cup heavy cream into the gravy before returning it to the oven.

Mushroom‑Smothered Version: Add 8 ounces sliced mushrooms with the onions.

Ranch‑Style Version: Replace Italian seasoning with 1 teaspoon dry ranch mix.

Slow Cooker Version: Cook on LOW 5 to 6 hours, then thicken gravy on the stovetop.
