Down here along the Gulf Coast, we don’t just eat rice - we practically live with it.

Louisiana grows it, Mississippi cooks it for sure, and most of us have a container of leftover rice tucked in the fridge at all times. It shows up under gravies of course, and definitely red beans and rice, with smothered dishes, in casseroles, and especially in quick skillet meals when the day’s been long and supper needs to happen fast.

Fried rice is one of my personal favorite ways to use up that leftover rice.

Life lately has been a little slower around here. I’ve been down with a virus for a few days, which put me behind more than I expected, but I’m finally easing back into the kitchen and catching up where I can. If you’ve ever had one of those weeks where everything feels a step behind, you’re in good company. Today’s recipe was exactly the kind of bright, simple bowl I needed to get back into the swing of things.

Some recipes go viral because they’re flashy on camera… and some go viral because they’re actually really good.

This Mexican Tuna Salad was one of those TikTok darlings that sounded incredible, but when I made it at home, it landed a little flat. Not that it was bad, not at all, but it just seemed to be missing that spark that makes you want to go back for another bite.

It’s humble, comforting, and quietly irresistible, the sort of side that people spoon onto their plate “just to try” and then circle back for a second helping.

This one is a bit of a cross between two recipes I saw on TikTok - one was called "None Left Corn" from kristencreativekids and the other is based on multiple copycat recipes for a Ritz Carlton's Creamed Corn recipe that's been floating around the web for a while.
