Marinated Grilled Pork Chops


I had these two beautiful bone-in pork chops in the freezer just waiting to do something with!

There were four in the pack originally but since since there are only two of us at home, I used them two at a time. First, to make those fabulous stuffed chops again and I just froze the remaining two for another time.

I thought that I'd do a simple marinade and grill the remaining two.

I love experimenting with marinades but I wanted to keep this one fairly simple. Apple cider vinegar both helps to break down fibers for a more tender pork chop and adds a little flavor, supported by flavor boosters of olive oil, mustard, garlic and paprika. Throw in some fresh herbs if you have them!

Here's what you'll need to make my Marinated Grilled Pork Chops:
  • 2 (1-inch thick) unbrined center cut bone-in pork chops
  • 1/8 cup extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dry mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon freshly cracked pepper
  • 1/2 teaspoon salt, seasoning salt or your favorite blend
  • 1/2 teaspoon Creole or Cajun seasoning

Here's how to make it!

Combine the dry seasonings. Include the salt or seasoning salt and Creole or Cajun seasoning if you're only gonna leave the chops in an hour. If overnight, wait to season on the grill.


Add the wet ingredients and mix.


Use a paper towel to pat the pork chops dry.


Place chops in a zippered storage bag.


Pour the marinade over the chops, seal the bag and swish the marinade all around the chops. Place the bag into a bowl and refrigerate at least 1 hour or up to overnight.

I'm using an indoor grill (#ad) today, which is pretty much my most common level of grilling these days because my heat tolerance has lessened as I've gotten older and frankly it gets so hot here in the Deep South! As I write this, summer hasn't even arrived and I can't bear to be outside for long, much less stand over a grill.

Remove the chops from the refrigerator and let them come to room temperature. Preheat the grill and when ready, place chops on grill.


Season to taste with salt, pepper and Creole or Cajun seasoning, or use your favorite all-purpose or herb based seasonings.
