Instant Pot Pork Roast

Instant Pot Pork Roast

This is a classic, very basic pork roast done in the Instant Pot, or whatever electronic pressure cooker you have.

I say that, because long before the Instant Pot craze, I had purchased three other cookers - two are QVC branded Cook's Essentials pots and the other a Power XL pressure cooker. They all did such a fine job, that I didn't get on the IP bandwagon for quite some time.

It doesn't take long to fall in love with them though, because now I have not one, but two IP branded pots, in addition to those other pots, and at times, I have had at least three going all at once!

Here's how to make my Instant Pot/Electronic Pressure Cooker Pork Roast.

Use the sauté or browning function on your pot, or heat oil and butter in the bottom of a large skillet. I'm using very basic seasonings here - salt, pepper, Cajun seasoning and garlic powder. Sprinkle generously on all sides of the roast.


Brown all over in the hot oil and butter.


Meanwhile, whisk together the chicken stock/broth, pepper jelly and thyme.


Pour over roast.


Add bay leaves, seal and cook at HIGH pressure for 45 minutes.


Allow pressure to release naturally for 10 minutes, then release any remaining pressure. Check internal temperature with an instant read thermometer, for a temp of 145 degrees F, or higher. Remove roast and set aside to rest. Skim off any excess fat from the top and switch pot to sauté or browning function.


For the gravy, whisk together the water, cornstarch and mustard until smooth. Pour into the cooker and bring to a boil, stirring until thickened.

Slice roast, spoon gravy over the roast and serve remaining gravy at the table.

Ingredients

  • 3 to 4 pound pork roast
  • 1 tablespoon cooking oil
  • 1/2 tablespoon unsalted butter
  • Salt, pepper, Cajun/Creole and garlic powder, to taste
  • 1 cup chicken stock or broth
  • 1/2 cup pepper jelly
  • 1 teaspoon dried thyme
  • 2 medium bay leaves
  • 2 tablespoons water
  • 2 tablespoons cornstarch
  • 1 teaspoon yellow mustard

Instructions

  1. Use the sauté or browning function on your pot, or heat oil and butter in the bottom of a large skillet. Sprinkle roast generously with salt, pepper, Cajun seasoning and garlic powder on all sides. Brown roast in hot oil and butter.
  2. Meanwhile, whisk together the chicken stock/broth, pepper jelly and thyme. Pour over roast, add bay leaves, seal and cook at HIGH pressure for 45 minutes.

  5. Whisk together the water, cornstarch and mustard until smooth. Stir into boiling drippings until thickened.
  6. Slice roast, spoon gravy over the roast and serve remaining gravy at the table.

Notes:

You can use pork loin, shoulder or butt for this recipe. I used pork shoulder. I also used a peach and pepper jam that I had canned; apricot jelly is also good. Though not an authentic mojo seasoned roast, use leftovers for Cuban sandwiches on Cuban bread, with sliced pork, sliced ham, Swiss cheese, sliced pickles and mustard.

To Add Vegetables: Prepare as above and cook roast for 40 minutes, let pressure release naturally for 10 minutes, release any remaining pressure. Leave roast in pot, but add 6 small red-skinned potatoes, cut in half, 1 medium onion, cut into large chunks, 2 carrots cut into 1-inch chunks and 1 rib celery sliced thick to pot. Seal and set on high for 5 minutes, then quick release.
