A classic chicken based chili made with white beans and loads of spicy goodness!




This small batch, basic ground beef and tomato chili with beans, made in the slow cooker. Can be doubled.

A nice, thick highly seasoned, no beans, ground beef chili.




A skillet chili, made for hot dogs and with a Cajun-flair, made with ground beef, seasoned with Worcestershire, yellow mustard, onion, hot sauce, Cajun and other herbs and seasonings.



My homemade beef and bean stovetop chili, served "Cincinnati Style" on a bed of spaghetti noodles and topped with cheese. If you've turned your nose up at this and never tried it, you must try it at least once. I got hooked first bite.



A ground beef chili, made with ground chuck, onion, peppers, basic chili seasonings, and beans.



Skillet Chili Mac - a quick skillet meal of ground beef, tomatoes, chili seasonings, beans, cheese and medium shell pasta.



Texas style chili, made with a roast, loads of sweet and hot peppers, stewed and Rotel tomatoes and beef stock and beer if you like, heavy on cumin and chili powder and thickened with a slurry of masa harina.



An easy chili, made leaner with ground turkey, more hearty with vegetables and beans, and gets a flavor boost from basic pantry seasonings.


Chili Cheese Fries with Quick Chili

Layer your favorite chili over cooked french fries for a chili cheese fry treat!

I wrote this small batch chili as a quick replacement for canned chili, when I want to make things like these Chili Cheese Fries. Begin by placing a layer of cooked French fries into oven safe plates or a baking sheet. Divide the following over each plate in this order, cheese, chili and remaining cheese. Place under a preheated broiler, leaving the oven door slightly ajar,  just until the cheese has melted - only a few seconds! Add toppings as desired - raw onion, chopped, cooked bacon, sour cream, guacamole or chopped avocado, black olives, sliced pickled jalapeno and sliced green onion are all good. Serve immediately.



Make a walking taco in a bowl instead of a bag...
You can use that same quick chili to make walking tacos, either in the bag or like I usually do at home, in an oven safe bowl! Just start with individual bags of corn chips. Gently crush chips before opening bag. Open bag and top the chips with some cheese, add hot chili, some additional cheese and toppings as desired. For a bowl, just do the same layering!


Frito Pie Casserole

...or a Frito Pie casserole!
This is the same concept as a walking taco, except in casserole form. Since my quick chili makes about a cup, you'll likely want to increase that according to the size baking dish you are using. Spread a layer of corn chips on the bottom of a baking dish, top with chili, then grated cheese. Bake at 350 degrees F for about 15 to 20 minutes or until the cheese is melted. Add toppings as desired.
