Butterscotch Pecan Cookie Mix in a Jar

Butterscotch Pecan Cookie Mix in a Jar

Butterscotch. Pecan. Cookies. Seriously. Now y'all know reading the title of this recipe that this was right up my little ole southern ally didn't ya? 

Thank GOODNESS, that this is the time of year where most people (finally) throw caution to the wind for a bit and indulge in many of the sweet treats that they love. One of the things that busy folks love receiving as a gift at Christmas is any kind of homemade food goodies, but busy moms especially would love receiving a gift of a homemade cookie mix in a jar. Not only is it something that they can just dump in a bowl, add a few fresh ingredients and have homemade cookies done in no time, but it's also something that they can have little aspiring chefs come and help with in the kitchen.

I'm making these luscious butterscotch pecan cookies, and I am here to tell you that they are some kind of delicious!  For this mix, we'll need all purpose flour, salt, baking soda, Domino light brown sugar, butterscotch morsels, chopped pecans and some sort of clear jar that will hold approximately 1 quart.


First, whisk together the flour, baking soda and salt.  I'm using a wide-mouth Mason jar to do my cookie in a mix, which I happened to have on hand already.  I'm also using the funnel that came with my canning kit, since it has a wide spout - perfect for layering all of the ingredients.


In the bottom of the jar, add in the flour mixture. Shake the jar to level the flour a bit.  Top that layer with the brown sugar.


Pat down the brown sugar to pack it in tight. I used the top part of a meat mallet.


Add the butterscotch chips on top of the brown sugar and press them in. Top with the chopped pecans and press them in.


To decorate the top, use a piece of scrap fabric, pretty paper, or tissue paper cut into a 7-inch square or round.


Add the ring and trim any ragged edges.  I used a piece of decorative ribbon to hide the ring and just stapled the ends together. I'll cover the staple with the bow.


On top of the ribbon, I used some raffia strips in natural, red and green colors that I twisted together and wrapped around the jar.  I stuck in some squiggly raffia pieces and tied a bow over them.


When the recipient of your gift is ready to make cookies, all they will need to do is cream some butter, add an egg and vanilla extract, and dump in the entire contents of the cookie jar mix and mix it all together.


Then I wrapped the dough and let it chill in the fridge for a bit to firm up some. The recipe will make 3 dozen small cookies when making them by teaspoons, but I like to use this small scoop, so I'll probably get about 2 dozen my size. I also like to use parchment paper when I bake cookies.


Scoop the dough onto the parchment and bake.  Remove and let cool completely on a rack.


Eat 'em up and enjoy, or package them up and give them to a very lucky recipient!
